Glady's is AMAZING. My gf works across the street and we've been there a bunch. The chicken is obviously incredible, but don't sleep on the pork or the curry goat either. Extra spicy slaw, rice and peas. A painkiller to wash it down. Excellence. I'm gonna try the pepper shrimp next go round.

I am Jamaican and I can attest that all the islands in the Caribbean got great food. The food in the Caribbean can go toe to toe or even best other regions when it comes to food. Absolutely amazing. Cuba, Jamaica, Trinidad, Puerto Rico, DR, Barbados, Antigua, Haiti etc. The Caribbean is the bomb.

The best jerk chicken and pork that I’ve ever had was in Montego Bay, Jamacia at a place called Scotchies. They use pimento and sweet woods and is seasoned to perfection!

My 1st time to Jamaica Negril on the road away from all the 5 star hotels ,they setup bbqs for lunch. For 5 U.S. you got a red stripe beer, jerk chicken and some sauce with coco bread. I have been hooked ever since. Like he said U never get tired of it. Make your own jerk sauce (control the sugar and salt) Enjoy.

throwing water on the fire creates steam, not smoke. the water from the steam displaces the oils in the chicken making a less flavorful bird. if you need a small controlled hit of smoke now and again use some small wood shavings like was done towards the end. also, just gotta say, the rub really needed to be applied under the skin.

The "secret" to real jerk chicken is smoking it with pimento wood low and slow to let the rest of the flavours infuse. You can make it in the oven without smoking and will be close but not the same. Some smoked salt can help with that if you are cooking it in a regular oven...

FOOD SAFETY NOTICE: whilst cooking meats on an open fire, make sure flame is NOT licking any part of the meat directly. Having patches where fire was directly on the flesh causes a certain unpleasant taste for sure, but it is also proven to be carcinogenic.

I'm surprised that he finished with the pimento wood smoke. Normally with wood cooked meat like a brisket or ribs the smoke process is done at the beginning when the meat is raw and more able (or so the theory goes) to absorb the smoke. Interesting.
