When you tried it again the next day and added vinegar (good choice!! Helps maintain the structure of the stiff peaks) and it looked all thick I was so happy and then Vincent kept mixing it and I literally blacked out 😭 you can’t over mix it or you’ll beat all the air out that you just whipped in bb girl. It’s a gentle process but I know you can do it!!!

Exactly! Only use the whisk to whip the egg whites, after that fold GENTLY to incorporate into the batter. More whisking is going to deflate the egg whites and too much stirring develops gluten in the batter which is what is making them tough and rubbery!

Pro tip: You have to fold the foam in gently with a paddle, covering them with the other mixture constantly and trying to not touch the foam itself. The whisk broke the bubbles in the foam.

What happens is when you over-whisk the egg white into the mix, the air bubbles pop. The goal is the fold the egg white and pancake mix gently so the pancake can be fluffy 😇

Naomi! Fluffy pancake top tip! Make sure to whip the egg whites to soft peaks (takes a while) and when you fold them in always use a spatula not a whisk (keeps them airey) and serve on a hot plate to prevent them shrinking. 😉
