None of the grocery stores carried sour starch so I ended up ordering it from Amazon. It was totally worth it !!! One important note, is that I had to add more sour starch than the recipe called for in order for it thicken up. I waited 7 minutes and it was still pretty liquidity. I did end up having to put it in the blender to completely blend the additional sour starch. It WAS Absolutely yummy-licious gooey and cheesy !!!! Super impressed! !!!

I made it a 2nd time and I blended ingredients in a high power blender and used the microwave instead of the stove top and it thickened up much faster. I mixed it every minute and it was ready in 2 minutes!

@@ChefJana This is the first time I have seen fermented tofu and olive brine, as umami flavors, on youtube vegan cheese recipes.....from what I have seen online, mushroom powder, sauerkraut juice, and lactic acid powder ( if available) also replicate the cheese flavor. Of course, olives are usually preserved in lactic acid liquid anyways.

Tapioca is another by-product of cassava, there is granulated and powdered. tapioca is made in a very hot skillet, it can be with a savory or sweet filling.

A few months too late, but, cheeses using tapioca starch or other such starchy thickeners tend to have not so good textures when refrigerated (they can be kinda gross to eat cold) - but they're amazing when melted / heated.

Hello chef. Thank you for all the lovely recipes! I tried your cheese recipe today and replaced the sour starch with equal amount tapioca starch. However for some reason the cheese wouldn't thicken. So I added more starch and finally it became very stretchy and not so good. I followed the exact measurements in your recipe. Do you have an idea what could be the problem? Thank you

Same here, it was far too liquidy. And I used the same starch she did. Some key piece of info is missing from this recipe.

@@Julia-b9x It didn't impact the taste and it turned out ok. Actually I think it was the almond milk. Chef Jana doesn't use almond milk so her recipes aren't tested with it. I tried the recipe again with oat milk and it thickened without adding extra starch. Much better1

OK I’m trying this and I am probably about 20 minutes in and it still will not thicken like yours did. I even added another tablespoon of sour starch. I’ve lowered the heat and that might solve it!!!! Lost volume but now I know for future, low and slow

Hi Jana ! I doubled the measures, but my cheese takes more than 15 min to thicken and doesn't seem to thicken at all☹️, I used ground tapioca instead, do you think that could be the reason ?

Definitely. Tapioca starch is not so strong binding as the sour starch. Add a bit more and it’ll take some more time to thicken actually;)

I did recipe to the T even yes with sour starch however it came out to liquidly400mL is too much maybe 275 mL or 300 mL would be better. Love ya !

Thats a great question! For a mac and cheese you need to add extra milk and extra nutritional yeast, plus adjust the rest of the spices and salt and add a pinch of white pepper. ;)
