I made one last night with diced garlic, basil tomatoes, sauted onions, red, and yellow bell pepper, half can black beans, whole kernel corn. Dash cayenne pepper, dash chili powder with ground beef and cheddar cheese. I put corn bread mixed with cheddar cheese on bottom and top. It is so good.

Mama used to call this Tamale Pie and we kids loved it. Pretty much the same recipe except she added a teeny bit of corn meal to the meat to give it extra body. I'm droolin' :)

Made my mouth water. I'm going to make it for dinner tonight, but I'm going to mix some diced Hatch chilis in the corn bread. Yummm. If I had some chorizo, I would add that to the meat mixture.

Good looking recipe Robin, thanks. I have to say, you're the first "cooking show" I've ever watched where you honestly admit it takes 20-25 minutes to cook down onions to a lovely brown colour (aka 'carmelized'). Every other show and recipe always state something like 5 minutes. My onions are still white after 5 minutes. It takes way longer than that, as you state! I have checked out your website, and will have to check out some of your other videos, they are very easy to follow. ~Diana from Toronto

i'm going to make the taco bake, it looks delicious. onions can be troublesome to chop, i take the top off, turn it on end, split it down through the root, peel it, slice and chop it like you did, leaving the root on makes it easier to chop.

Ok , gonna do this one also. I take a 8 inch cake pan spray cooking oil on it, then put soft tortilla shells in water on plate. Then drape them halfway over pan. Set aside before doing draping. Ok get steak fajitas the already cooked ones . I use two packages . Put in frying pan add cooking oil if you want, get them good n hot. I usually sautee onion and bell pepper to my liked amount. Put one or 2 packs taco seasoning in fajitas .stir in good . Add onion bell pepper . Mix well. Now put your wet, patted dry tortilla shells on pan draped half over over lapping each other. Put one soft on bottom. Add fajita mixture and cheese. I later in refried beans. Then bake at 350 for 20 minutes. The cheese I use is mild grated cheese. From a bag in refrigerated food section of store. You can do chicken fajitas or hamburger meat.fixes pretty quick. Add salsa and sour cream when ready to enjoy. I put. Jalapenos on there too.

I am looking for ways to use up my cornbread. It's only good one day and we can't eat it all. Could I get away with crumbling up the leftover bread and just put the cheese on at the get go? The cheese could maybe protect the bread from drying out too much. Your opinion?
