Hey Family,
It has been a long time since we have done a cooking video just the two of us!! We miss doing these style vlogs and always have so much fun, hope you all enjoy today's fun cooking vlog.
Today we have Bibi Ji coming over for dinner and she has a big surprise for us so stay tuned for the next vlog and also the taste test of Abbey's popular Palak Paneer Sabzi!!!
Recipe As Below
Ingredients:
4 Spinach bags (palak)
3 green chillis (mircha)
Salt
2 onions (paija)
Half clove of garlic
Just over thumb size of ginger
1 can of diced tomatoes
Turmeric powder
Garam masala
Black pepper
Red chilli powder (optional)
Cumin seeds (jeera)
Vegetable oil/ghee
Paneer
THE INSTRUCTIONS:
Firstly, as shown in the video, gather all the spinach and cut it by the ends. Then, wash each bunch in water (changing the water in between if it gets dirty) and leave to dry. Once this is one, put a small amount of water (approximately a cup and a half) into the pressure cooker and put on heat. Whilst this heats up, chop the spinach (doesn't have to be in very small amounts) and add as you chop in order for the spinach to dissolve and all fit into the pan. Once this is all completed, add in 1 grinded green chilli, and 1 and 1/2 teaspoons of salt. Put the lid on the pressure cooker after this and leave it until it reaches 3 bissels. Once these 3 bissels have sounded, take from heat and leave it aside for the steam to leave the cooker. Whilst this is cooling, you can start the tarka.
In a frying pan, coat it with enough oil/ghee of your choosing just enough to cover the bottom of the pan, and add some cumin seeds (jeera) to the pan to darken. Whilst this happens, grind the onion, garlic, ginger, and remaining 2 chillis and add to oil once it is hot. Stir this well so it does not stick to bottom of the pan. Grind the can of tomatoes and add this in once the onion mix has darkened. Then add 2 teaspoons of salt, 1 teaspoon of turmeric powder, and 1/2 a teaspoon of garam masala and black pepper. If the curry is not hot enough from these spices you can also add in red chilli powder at this point also to add some heat. Stir this well and cover with a lid. Leave this to sit for 2 minutes, and in this time you can check on the pressure cooker. Once opened, get a hand grinder and grind the spinach until gooey. Then, check on tarka and stir well. Once this has been stirred and has developed into a dark colour (almost red), you can add in the spinach mix from the pressure cooker to your frying pan.
Lastly, cut up approximately half a block of paneer into small cubes and stir through the spinach, then cover with lid and leave for around 10-15 minutes, stirring occasionally, to allow the paneer to cook. Then you are done!
You can use less ingredients if you are only making this for a small group, just half all of these ingredients listed, and it still comes out perfectly.

Don’t put so much water in palak all had gone in because palak leaves its water always Blanch the palak hot boiling water for two minutes and put it in cold water

Don't need a cooker to boil palak and nothing like fresh blanched tomatoes, not tinned ones.

To save a salty dish you can always add a potatoes or a balls of ata. That will soak up the salt

After roasting the onions, you can add 1 tablespoon besan roast it with onions for a minute or two, then add tomatoes, do the same process as you're doing. . Besan helps to bind the palak and make the texture better. No need to add water while boiling the palak except 1 or 2 tablespoons, by separating water after boiling the palak,you are also removing all the nutrients. We love your vlogs and you guys❤

Abbey dearest, I'm no expert in kitchen but here's a quick fix I learnt from my mother to save extra salt or spice in cooking- add cream. To fix watery consistency add bread crumbs. Hope that helps! :)

Palak releases a lot of moisture, especially, the instant you add salt. There's a handy way to fix that. As soon as you are done frying the rest of the ingredients add a teaspoonful - or tablespoonful, (if you have added water) - of plain atta to the fried mixture, and stir it until it's fragrant and beginning to brown. Proceed to whatever the next step is

U just don need to pressure cook the spinach!!! Just give it a boil for 3-5 min. N just directly wash it under cold water to maintain beautiful green color of spinach. N then u can blend it into paste n do yhe tadka

Use a colander to drain the excess stock while it's still hot. Add a half teaspoon of haldi and steep the paneer pieces in this. They soften beautifully and acquire a bright colour. When you add them to your fried masala they will absorb the flavour readily. The stock can be used to thin dal, or in any number of ways when you cook

You don’t add tomatoes and onions in saag paneer. All you add is ginger and garlic tarka. Tomatoes and onions ruin the taste. Also don’t add cumin seeds. You should stop using pressure cooker for dhals. They should be cooked slowly. If you add too much things to saag it ruins the taste. Don’t add: 1.onions 2.tomatoes 3.Tumeric 4. Cummin seeds All you need is garlic and ginger with chilli and garam masala to get the authentic Punjabi taste

Please dont boil palak in cooker.. u just had to blanch the palak in boiling water for 5min. The leaves would be soft and then put them in chilled water. Then, Grind them to paste.

No need to use cooker. Just boil the palak for few minutes. Thn drain the water n make puree. U can add the water later while cooking.
