The silence from your kids when they started eating is a good sign that they love what you cook. I like better the beef version of "mami" noodle soup. Because Filipinos are travelling abroad & have tried different ingredients, Filipinos nowadays cooks traditional Filipino cuisine with a twist without compromising its umami flavor. My grandma was from the same town as Chef Manabat and she used cinnamon for soups and stews. The seive we used to dip the ingredients was shaped deeply (like the letter U) so that the vegetables were crunchy but doesn't taste raw. ❤❤❤

For me, when we cook chicken or fish, i rub it with salt to take out the slimy parts of the meat or fish then wash very well with cold water. Then I mix cold water with a splash of vinegar and soak the meat or fish in the mix water. For this solution, you kill the bad bacteria and fowl smell. Rince again with clean cold water and that's it. On the other hands, some people they blanch the meat to take out the fowl smells. Enjoy and God bless you all 🙏 💖

You are right. we don't usually add cinnamon and coriander seeds. that is not original. it's just a "modern" variation or personal preference. but it's ok.❤ Also, when you dip the noodles and vegetables in the broth, make sure that the broth is boiling briskly so that the items that you dip will be evenly cooked. that's why koistya said the carrots are raw.😊

Legend has it that "mami" is from a restaurant that sold these noodles. "Ma" was the original owner's family name, and "mi" meant noodles. So "mami" meant "Ma's noodles". Mr. Ma didn't put any copyright on it, so people sold similar noodle soups it with that name until it became _the_ name of the dish. And Ma Mon Luk is still standing today! 1:03 I not sure why Russians say Манаба́т when I'm pretty sure it's Мана́бат. 1:52 Chef RV says "para matanggál ang lansâ;" to remove foul tastes. Indeed, when I cook chicken and pork adobo, I boil the pork first to make the meat taste clean (remove the foul taste). 3:17 It _is_ unusual. Chef RV can get away with it; he's mastered it. Cinnamon and star anise are also seen in Chinese cooking. But most Filipinos do not have easy access to these spices, so most Filipinos instead make a simple stock using chicken bones, onions, garlic, and onions, black pepper, and maybe a bay leaf or two. Valentina, you are becoming a better cook. In the Phils. if the broth is not salty enough we still add fish sauce to the bowl. We can also add more powdered ground pepper. It all depends on the person's preference. Chicken mami is a chinese dish which was introduced to the filipinos a long time ago by the Chinese. Mix the ingredients in your bowl before you start eating just like halo-halo. Putting cinammon stick in the broth helps in making the meat/chicken taste fresh. It is a secret shared by a chinese chef to chef RV. That is what I remembered from his explantion before. It's good you are learning not to overcook the veggies now. Yummy! How about making skinless longaniza. You have to prepare this a day ahead because it needs to be frozen before frying. I am sure you will like it for breakfast paired with sunny side up eggs, hot cocoa and garlic fried rice.

Looks good! You are improving on cooking. Serve less more often is the way for noodles. This way, the noodles will not turn out soggy as it will take sometime to be consumed. Also the soup will maintain its temperature. Serve less so you can eat fast and in right quality and temperature. Serve more if the guest wants more.

You can add chicken bullion instead of salt to make it even more tasty. You can also use 2 forks to shred the chicken breasts. Add a lot of toasted chopped garlic on top to make it really delicious. That is how traditional chicken mami is. Enjoy!
