What is the "2 filtered water" at the beginning of the recipe? I don't see that you added plain water anywhere.

Thanks for noticing that. I just fixed it. It's the 2 tablespoons of filtered water that put in the stock pot during the beginning of the recipe to sauté the onions. Thanks so much for watching.

Quick tip. You never rinse mushrooms. It's a cardinal sin in the fungi world. It makes them tough.

I've made this 3 times in the last 3 weeks. I love, love, love this mushroom soup. Not only is it good as a soup, I use it as a gravy. I ladle over potatoes and use as a pasta sauce. Thank you so much for this easy recipe. I immersion blend so the bits of mushrooms are small.

You always share the most fabulous recipes from breakfast and dinner all your meals were spectacular love starting out with that green smoothie with mango and pineapple super delicious and those tofu lettuce wraps I could eat those every day they looked so good with the fresh veggies but that mushroom soup was just outstanding I know you hate mushrooms but the combinations of shiitake and portobello with the tamari sauce just a ton of flavor I would love the mushroom soup puréed also I like when they do that

mate, i enjoyed this video immensely. just thought id mention to you that i also make these yummy lettuce wraps full of tofu scramble (and leftover vege assortments!) but i add a good spoonful of turmeric (and some black pepper of course) to the tofu in the pan and it goes a pretty yellow eggy colour instead of white-beige. i also find a sprinkle of (my favourite) fine diced spanish onion added raw to the top of each wrap gives it a wee bit of an additional texture (plus i like a shake or two of nutritional yeast to finish) gonna make your mushroom soup next! thanks for the recipe!

I adore mushrooms. Just made this soup tonight. I could not find shitake so all I had was a pound of baby Bella and then I did a full pound of white mushrooms. I did a shake of hot pepper flakes to my bowl after tasting. I always need a kick of hot spice for some reason. Was amazing! Thank you for sharing.

I agree. I am not a fan of the mushroom texture. I have found though, that if I use dehydrated mushrooms the texture is not as rubbery. It just does not rehydrate to it's original rubberiness. Worth a try.

Callie, I just weight myself. I gained .8 of a pound. I had Lentil loaf, mashed potatoes, sweet potatoes and stuffing for 2 of my 3 meals from Thursday to Sunday. Even after all that, I didn't even gain a whole pound. You and I did great during Thanksgiving. Now let's jump all over it and keep going. Thanks so much for watching.

Hey Joey, Im right there with you on not being able to get past the texture of mushrooms, but I like the taste. What I do, I put them in my chopper and chop them up real fine, then I can add them to anything that I am eating. Love the flavor that way, not the texture of them whole. Try that :)

Ok, made it tonight, and here is what I will do next time to make it work for us: NO DILL. No lemon, lemon pepper, pepper. Use (maybe) oat milk instead of soy milk (my soy milk had cane sugar in it, I didn't know until I the soup was finished). I blended the entire stock pot of soup. The texture is creamy and pleasing. Will retry next week.

I had one of those countertop induction burners, I loved it, so energy efficient! But, I had to send it back to Amazon because you can't use all of your cookware on this type of burner. I have an infrared burner coming today that uses all types of cookware

Hello guys! I used to hate mushrooms too! I eat them all the time now. Are you guys familiar with the channel "Wicked Healthy"? There are lots of mushroom recipes there, you guys might enjoy them 😊. I am excited to try the soup but I have to say I'll probably add some wild rice to it, I think wild rice and mushrooms pair so well together 😋. Also if you can't handle the mushrooms' texture but still want their benefits you can always get the different mushroom powders, there's also mushroom coffee blend that is very good from "Four sigmatic" 😉

Connie, it makes no sense, right? The texture of mushrooms and tofu are almost identical when you cook both of them. I think that mushrooms always taste dirty to me. Because you cant really soak them to clean them, you have to rinse and wipe. Someone asked me why I didn't show the mushroom cleaning process. That was something I now wish I had done. What you dont see in the video is me washing every single mushroom and rubbing them dry with kitchen towels so they were completely clean and spotless. Thats why I like this mushroom soup. It doesn't have the dirty taste I associate with mushrooms but it is most likely because I really put an hour into cleaning them correctly. BTW, when COVID is over, I am going to arrange some meetups for all the Phoenix area people. Maybe we can do First Friday in Phoenix or ZEN Nights in Mesa one night. There are a lot of us from this area on the FB group. Thanks so much for watching.

I wish I could see the portions you eat at each meal b/c if I give my husband small portions like the ones you serve he would not be satisfied.

Hi MJ. Give your husband as large a portion as he wants at each meal, you don't have to count calories when you are eating starches and non starchy veggies. Just make sure its half non starchy veggies and half starch. So for the tofu wraps, those are already half and half, he can have 5 of those if he wants. For the soup, serve that with a small side plate of rice, potatoes, or beans and if he still wants more he can have another bowl of soup and another side plate of starch. You don't want to go hungry on The Starch Solution.

Are you fairly happy with the induction cooker? I want one but wasn’t sure if I could use my own pots and pans.

I am using a ScanPan on it which is my own so it works well with anything cast iron or steel. I heats up instantly. When I put water in the pot, it is steaming in less than 60 seconds. The one complaint I have with it is that its noisy. There is a fan running inside the thing when its on, so I HAVE to mute the volume and do a voice over when I use this thing. Its a few years old so maybe the new ones don't do that. If you buy one, look for one that is quiet. But it works amazing.

Hi, It's Joey. The texture is the part I dont like about the mushrooms. If I blend them, then I am fine with them because the soup is actually really tasty. Thanks so much for watching.

@@PlantBasedDads ive pan fried my well-chopped mushrooms a few times in a spoonful of soy sauce and a spoonful of vegan worcestshire sauce, then i get em out of the pan, sprinkle panko crumbs on em, air fry em, till theyre unrecognisable as mushrooms, and i add em to the top of soups like as a big crunchy garnish! i have a mate who hates mushrooms and still doesnt know what the delicious topping to my onion soup is.
