Dear Albert Thank You, once again. I cooked this last night and the results were excellent. I was always taught in my classes with regional italian cooery to never wash mushrooms and only ever clean them with a paper towel? Yours truly a Patreon.

I know this tastes great ! Several years ago I had some friends staying with me from Israel . They basically made your mushroom omelet the exact same way except they added parsley instead of chives I think parsley is more abundant in their country ! What makes this omelet amazing is the way the mushrooms are sautéed to add a new dimension of amazing flavor! I've been making mushroom omelet this way since then. Albert, just so happens I bought some chives from an asian market a few days ago so I'm going to make your recipe. Thanks❤

Always use the best you can get. Especially for eggs. All while the farmers' market is open for the summer, I buy from the same farmer. He saves for me his extra duck eggs, and, yes, it's worth the time and cost. The only time my eggs are fresher than his is if I locate a nest that's been abandoned, maybe twice a decade.

Who doesn't? But it doesn't take 8 and a half minutes to explain how to make a mushroom omelette. It's a doddle that any basic cook can do. This guy makes me spare -- some very nice recipes (nothing original, or even Spanish, here) but he takes forever to do it. This is an advertising site, plain and simple. If I am interested in his dish, I go straight to his printed recipe, wade through the ads for products that are all seriously over-priced, and read it. The videos, and his oleaginous style, are too off-putting. I don't expect to see this up there for long -- I suspect only the fawning comments survive.

Why isn't putting the hot mushrooms in the egg mixture a problem? Won't the eggs start to cook or be heated into the danger zone (cue Kenny Loggins)

Thats what you are looking for when making a spanish omelette. We put the fried potatoes and onions directly to the eggs from the hot pan (I dont even worry about the oil) and let the heat slowly cook the eggs. Then the result is much more creamy. And I actuallt think that is one of the key secrets of a great omelte.

hey there! I am dying to get a Spanish omelette pan like the one you use, but I'm having a bugger of a time trying to find one!! I live in Australia and the closest I got to one was a regular "omelette pan" (the one that folds it in half...not a fan) or one where the pans are hinged together at the opposite end of the handle and they are very shallow. They were both from eBay. Are there any other names they could come under and is there any way you could point me in the right direction so I can lay my hands on one of these babies!! I know it's probably not super essential, but trying to flip a heavy pan onto a plate is a little bit tricky when you're trying to keep your balance on only one leg! (I'm a full leg amputee). Thanks so much for all the time you put into making these awesome videos for all of us out there!

I think when you put the oil in the pan before putting the mushrooms prevent all the water to get out from it. I personally like to wait for all the water to get out of the mushroom and then add the oil to start the frying process (when the water gets released the mushrooms is actually boiling, not frying).

Tortilla española has potatoes, onions, eggs, extra virgin olive oil and salt, nothing else, but tortilla translates to omelette (certainly not to be confused with the tortilla that originates in Latin America).
