So cool Tim made homemade tortillas. I love your taco trays. The polenta sticks were brilliant!!!!! I want to try them. Hi Kira. I lost 4lbs in 8 days on this mini. Its about the same as my other Minis, but this one was much easier to stick to and much more fun to do. knowing I had those tacos to look forward to every night made it really simple to stick to. Thanks so much for watching.

This video is great. I have thought about doing a corn mini before, but didn’t have any idea what I would eat. I’m not a huge corn fan, but love tacos...but was thinking if I can’t have beans or potatoes I didn’t know what I’d use. Never even thought about riced cauliflower. I also love polenta, but never even thought about it for a corn mini.

I wanted to do the corn mini, but like you, I had no idea what to eat. Then I remembered that I read somewhere that McDougall allows corn tortilla shells for the mini. This is so cool i love rice and corn i tend to get tired of potatoes so that’s why I haven’t been successful with the mini with potatoes as the main starch. Can I have 5 minute Quaker Oats white hominy grits in place of the yellow polenta grits? I’m from the south and my comfort zone is with that type of grits. I’m doing the rice mini now but I can’t wait to try the corn mini thanks for sharing and I just subbed:) BTW the green plate did look aesthetically better🤷🏽♀️😄

Love polenta. We had it for lunch the day of or after brk of cornmeal mush. Fried crispy & served with maple syrup. Haven't done it since airfryer in house. BTW, when I moved to Fl learning to eat 'grits' was odd. Didn't look nor taste like corn to me. Think I might have a half serving once a yr. Still find them tasteless after 55+ yrs.

We make polenta pizza but the two things I do differently are: pop a flax egg in the mixture (is that allowed under a Mary's Mini?) and pour it into a tin (I use a brownie tin - so we get square pizza) and let it cool for at least an hour. I have omitted one or the other steps and the pizza was floppy and prone to collapse.

Next time I do this, I am going to look into a corn chowder recipe that will work with this. I think that would be a really good addition to all this. I don't think flax is allowed on the mini though, since it's a seed. Thanks so much for watching.

@@robinlaycock3186 Hi Robin I used my jar, on hand, last week, but, I believe it is one that has mushrooms. Just checked the recycle bin and still had the jar. It is "organic Spaghetti Sauce with mushrooms". No fat listed and no oil in ingredients on the jar. It has a brown background on the label. The label says fat free in a red circle. Hope this helps!!! It is good and so easy to use.

If you're losing weight, trust that you will lose it all over. You just may not notice it right away. Great job on 2 months of progress!

Its a starch so it works great as part of this plan.
