I love my Cafec Deep 27 brewers! They are perfect for microdosing, tasting and comparing more than 5-10 different sample roasts, terroirs, processes and varietals parallely without the urge to waste too many beans (and you can drink it ALL without spittin' out!). It is purely fabulous that even with these small doses (5-10g) the intensity, the depth and saturation of the flavor notes in the final cup are just as condensed and well balanced like brewing a perfect 20g dose cup with a fast Orea bottom for example. Fantastic little gadget... And it serves az an icecream cone holder during the summer!

For those interested in doing larger brews like mentioned at 10:50, Chemex does have the larger sized brewer options. The "8-cup" Chemex is my household daily driver for pour over and a 60 gram dose recipe is pretty much perfect for that size.

I may be wrong, but don't all the Chemexes from 5 cup all the way to 13 cup have the exact same top (brewing) part, and only differ in the size of the bottom part?
@masamunesword12 күн бұрын
@@korn568 That's correct, but the bottom part is what holds you back from making larger brews in the 6-cup, not bed depth, as it can't really handle a liter sized brew while the 8-cup is ideally sized for it.

Happy Holidays to you too! Thought I would respond for the first time, I've been watching your content for just under 2 yrs. now, I have utilized alot of your methodology with very positive results. Interestingly, the 2 methods that have improved my espresso the most was: firstly, spending more on the grinder. This improved my results more than anything else, at least until recently. For a little background I am working with a fairly small budget so I went manual (J Ultra) and the improvement was immediate and significant. The second method you suggested was slow feeding/grinding. Unfortunately, this isn't really practical with a manual grinder. That said, I have tired of the manual life (maybe I am a bit lazy) so when you resently reviewed the Flair Power Tower I impulsively ordered it. I know you were only moderately impressed with it but I decided I could look past the shortcomings (noise and hopper system) because like I said earlier, I'm lazy! My only thought was that it would improve the flow, it would be a time/labor saver. I didn't give any thought to slow feeding until a couple days ago. Suffice it to say I can't go back. What a huge difference! It looks like my flow just got longer again but at least my coffee has jumped to a whole new level! Thanks for all your insights. Level up!!

I wish auger fed grinders would have a much finer pitch so the beans went in at a slower rate. However, simply shaking the grounds to distribute the particle sizes more evenly definitely helps.

Hello Lance, I know you're not really into heavily processed coffees but for me they've been a way to get an interesting light roast experience on a cheap espresso focused grinder. I even managed to get a drying sensation with no bitternes on a Switch (15g, 200ml, immersed cold bloom and a single 85 C° percolation pour). Clarity is not a possibility, sure, but the sweetness and juiciness without any bitterness were pretty amazing considering the equipment used. Trendiness and terroir overshadowing aside, such coffees seem to be a little bit of a blessing for people with cheaper gear.

Hiya Lance, I'd love to see a video where you triangle test espresso made with no puck prep, just rawdogging form the grinder into the portafilter and tamping Vs your prefered method for puck prep. And then let an "average" person try the test as well. I'd love to see how big the differences are.
@MartinThmpsnАй бұрын
I don’t think that makes sense. The point of all the puck prep isn’t to change the flavor of the shot, but to improve the consistency of the results. If you can’t get a consistent result in a no-prep ramped shot, how can you get meaningful results from a blind test?

Larger pours are definitely something I disagree on. As someone who is used to making coffee for two, it's comparable to when I make for one so I think it's about preference. A bigger bloom volume does help for larger brews though (usually do 4x the weight of the coffee rather than 2x or 3x)

Hmmmm this has me wondering, when I have had problems getting a good V60, I will switch over to my 3 cup Chemex, which has a much more aggressive angle and a deeper bed.....and I will usually get a better cup. So I'm thinking that deep bed depth for my 20g or 18g brews was aiding my ability to get a better cup. Interesting stuff. Merry Christmas to all.
