Hey! Just wanted to say I've been trying off and on for many years to make this like my grandmother made it with no luck. I checked cookbooks in stores, libraries and recipes on the web over the years and could not get the right flavor or consistency i remember from my childhood. We kids only knew it was very good and loved it. But no one ever thought about learning how to make it before she passed. Every recipe I've found only produced somewhat hard, slightly browned corn that wasn't creamy and didn't have the right sweetness. Not sure if your recipe is how she did it, but it's the closest thing I've tasted since I was a child Thank you!

Can't believe I'm the 1st here. Here in Iowa we call that particular corn Peaches and Cream. I'm a purest when it comes to fresh corn on the cob...on the cob with real butter and let the natural sweetness drip down my chin. Like you said, your recipe would be good at a family gathering or potluck etc.

This is different than how we make it in Tennessee. I’m anxious to try the cream cheese and I will once my corn comes in. I usually scrape the cob for the corn milk and add a little water and a slurry of flour or cornstarch to thicken up the creamed corn and just a little sugar. My garden corn of choice is peaches and cream. A little whipping cream is good but cream cheese sounds good too. I am perfectly happy to eat fried corn and sliced garden tomatoes….and that’s dinner. Nothing else needed. I am also guilty of making it with bacon grease rather than butter…don’t tell anyone.

My favorite way to eat corn is in the field on a hot day... pick an ear, shuck it where you stand, and eat it instantly still hot from the sun. 2 minutes later is too late. This means pick, and eat. Once those golden few seconds of stalk fresh have passed, then this is the best way.. Sometimes I also use bacon, following the tradition of Mexican street food. I use Mexican Crema, same flavor as 'creme cheese' but softer. Mmmm, this IS a wonderful corn dish.. Been making it like this half my life.. Try it if you never did.. It IS wonderful. Chef Jeffrey, looks amazing. my Granny would make skillet corn, she would always scrape the juice out of the cob with a knife after cutting the corn off cob. fry it in butter or bacon grease add a little water. I can almost taste it now. peace Luke T

Hello uncle Chef Jeffrey thank you for this amazing recipe! OMG I seriously remember my mom specifically making me cut the corn off the cob although she would make me use a clean an empty Bundt pan stick the cob corn in the middle of the hole and cut around it and all the kernels of course will fall into the pan lol this recipe sounds delicious so I’m definitely going to give it a go!
