I tried but my kitchen became a mini pie catastrophe!

✨️Recipes:
1. Get a pre-made pie crust and bake according to the package (I baked for 8 mins so they don't burn)
✨️LEMON 🥧🍋
Mix together: 125g freshly squeezed lemon juice, 1 can of condensed milk, 3 egg yolks
✨️MOLTEN CHOCOLATE 🥧🍫
Mix togeher: 2 eggs, 3/4 granulated sugar, 1/4 cup cocoa powder, 1/4 tsp kosher salt, 5 tbls melted salted butter, 1 tbls Nutella, 1 tsp vanilla extract, 1/4 cup semi-sweet chocolate chips
✨️PUMPKIN 🥧🎃
Mix together: 1/2 can pumpkin puree, 6tbls light brown sugar, 1/4 cup heavy cream, 1 egg, 1/2 tbls vanilla, 1/2 tbls pumpkin pie spice, 1/4 tsp salt
2. Pour pie inserts into pie crusts. Pop in oven at 350° for about 10-15 mins (each flavour will require a different time). Let sit at room temperature to full set for 2+ hours.

The reason your pie crusts are shrinks is probably because you're over-kneading the pastry, if you over-knead it, the gluten forms like in bread and it shrinks. Hope this helps. :)

The easiest way to fix the crust becoming thick is to either create holes with a fork in order to stop any air from building up in the crust. That way it bakes without becoming quite as thick

If you make holes at the bottom with a fork to let trapped air escape, usually the pie crust is more even 🫶🏻

If you don't want to be bothered with the extra labor that comes with making pie dough from scratch and how it can be more time-consuming to make a miniature I would highly recommend getting tart shells they even come in their own foil casing so if someone didn't have a muffin tray all they need is a flat baking tray and to place the mini tart shells on it and follow the baking instructions and add their filling of choice

thanks! It only dawned on me when i was editing that I essentially made tarts..... which like..... I didn't think to even look up "where to buy premade tart shells" but that's exactly what I should have done. The filling was fun to make but the crusts sucked

I think the crust was like that because you used muffin molds. They are too high so the crust slid to the bottom while in the oven. Maybe you should try buying pie molds, that are larger and shorter. Hope this helps :)

Do you enjoy pie crust? If not, consider crumb crusts... They are way easier... Crushed cookies, crackers, nuts mixed with sugar and butter, par baked, then filled. My family loves almond crust for fruit tarts, crumbled shortbread cookie for fruit pie, and crushed chocolate wafer for chocolate pudding or mousse pie.

You could have made the Perfect Pie Crust (The Pioneer Woman) with 5 simple ingredients and 3 crusts with all the time wasted on these. You don't even need to chill it before using. Btw, if your dough pulls back when you roll it out you haven't rested it enough to let the gluten relax.
