Mama Cho's point about adjusting and learning is so true. When I started cooking more as a young adult, it was so freeing for me when I stopped worrying about whether I would get everything exactly right. It's part of the learning process!

GFCI are the plugs with the reset button. If water gets in or you get a shock the fuse trips and it turns off. If you need a substitute for Gochugaru at a regular American super market, Cayenne pepper or red pepper flakes in the spice section would be best. American chili powder is a mix of spices meant for making chili.

It's worth mentioning as well that usually only one or two receptacles in your kitchen will have the buttons, and then the other receptacles will be wired to that one GFCI. So you can't necessarily know by looking at the receptacle whether it's protected; you have to use the test button on the GFCI to check which ones in the room are protected.

Another note, you should be able to make gochugaru and gochujang as well! Sometimes the ingredients to make it are easier to find then the stuff itself! Maangchi has a video from 12 years ago on how to make gochujang, and there are many videos on different gochugaru blends.

My mom is also left handed but was trained to write with her right hand! Same with my grandfather (her father). I think it was pretty common back then for kids to be taught to switch to their right hand, especially in Asian cultures. I am also a lefty but times have changed and I was never "corrected" :)

They used to do that in Germany as well. I'm lucky to be born into a generation in which that wasn't the case anymore (not counting the "Hold your cutlery correctly!" aspect because that was VERY important to adults. I understand getting scolded for dangerous stuff, but it felt like holding fork and knife in the "wrong hand" was as bad as running across the street without looking). For some reason left-handedness is still considered strange by some people and I've heard "That looks weird" every now and then. Or that one teacher telling me to try throwing with my right hand because of course my weaker less coordinated hand would fix it *rolls eyes* (The ball didn't even fly straight, geez I wonder why XD)

1:56 I'm sure my 오이 김치 isn't as good as Mama Cho's, but I have made it: Ingredients -3 Lebanese (NOT hothouse or English) cucumbers -1 Tbsp coarse sea salt or kosher salt -3 Tbsp pre-shredded carrots -1 tsp chives -2 Tbsp gochugaru (I get this from Weee! Asian grocery delivery service; don't use Italian chili powder) -1 Tbsp minced garlic -1 Tbsp grated Asian pear -1 Tbsp honey -1 tsp mushroom soy sauce -¼ tsp ground ginger Method 1. Grate the pear. 2. Mix the gochugaru, minced garlic, pear, honey, soy sauce, and ginger well. 3. Peel the cucumbers. 4. Cut off the ends of the cucumbers. Divide the cucumbers into 3 pieces, then cross-cut each piece lengthwise. You should end up with 1.5-inch length pieces. 5. Put the cucumber in a bowl. Add the sea salt and mix gently. Let sit for 20 minutes. 6. Gently brush off the salt and transfer the cucumber to a clean bowl. 7. Pour in the sauce and mix gently. 8. Add the carrots, pear, and chives, then mix again. 9. Transfer to a container and cover. Keep at room temperature for 12-18 hours, then move it to the fridge. Serve once it is chilled.

My grandfather is like his mom where he was disciplined into writing only righty even though he was laft-handed. I'm left-handed but I grew up in a family of all right-handed siblings and parents, so while I do most things lefty, I never learned how to use a computer mouse lefty. We only had one "family computer" growing up, and I didn't get my own laptop until college, so I just got used to the mouse always being on the right side for my family when I was young. I also knit righty (it was easier to learn since patterns are almost all written for righties), and I tend to use scissors righty because they're designed to work best that way. If I ever learned to play a musical instrument like a guitar, I would probably also do it righty for convenience.

On the question of what soy sauce to buy, people here should be aware that there are some very inexpensive brands of soy sauce that are actually just salt and water. Check the ingredients to make sure they actually have soy in them as it changes the depth of the flavor without soy!

6:22 I just had the most surreal experience. As soon as Mrs. Cho said she lives in GA, I thought about my parents' house in GA, and they have the EXACT same railing on the house balcony, with the stairs leading down to the basement level where we kept the grill. Even the trees look the same-ish. It almost felt like one of those dreams where suddenly everyone looks at you or something.

Hey my mom is Hungarian and she cooks like a foreign old lady too. She cuts into her hand and all kinds of crazy shit that drives my dad (American) nuts, but she has never had an accident cooking. Touching hot pans is another example. I think It's just something our moms from the old country do.

So if you understand the basics of flavour-building you can kinda replace things here and there with other ingredients that may do a similar thing in a dish. For example if you don't have fish sauce, which tastes salty/briny and has a lot of umami, you can replace that with some dashi (bonito or kelp based for that fishy umami), bouillon or soup stock/concentrate, or even MSG. You can totally get veg/vegan variants of those. For that darkness/depth or any lacking saltiness, maybe add a bit of soy sauce, Maggi seasoning, or worst case scenario, salt. You're basically trying to "make" fish sauce and recreate what it does in the dish. Knowing what adds acid, sweetness, saltiness, and umami, and therefore how to "make up for" any of that that's lacking, is the key to substitution in my experience. Exactly the same with texture, balancing wet/dry, and other kinda food science-y parts of cooking but that requires a bit more knowledge imo.

Huh. I grew up in a time and place where you'd be disciplined for using your left hand, too; I'd always just assumed that was exclusively a Pennsylvania Dutch thing. I totally agree with the advice about watching other people cook to learn new dishes and techniques, too; some of my lady's favorite dishes are things that I've blue maged from my sister.

Sung-Won, I relate with you in that I write left-handed but throw right handed. I use chopsticks with my left hand and use a fork in my left hand, table knife in my right. I guess that is the 'standard' way for the knife and fork, but I honestly didn't know until I looked it up just now. For me, I feel more comfortable doing tasks that require finer control with my left hand, but tasks that require more strength with my right hand. So, regarding using kitchen knives, I would say use whichever is comfortable for you for the job. I would use my left for most things that require quick chopping or precision, but use my right to cut a watermelon or squash for example. I hope maybe that was helpful. Also, if I use chili powder, will it poison the corn?

Cooking is Science with a splash of art. There are protocol on making dishes that you can throw a wrench in. I make stuff at random and think... this sucks never doing that again or hit a little gem. While you are young go mess around in a kitchen because when you have kids... sometimes you don't have that liberty to have fun.

@@euomu sumgwon is definitely extremely greatful for his audience, no doubt. That doesn't mean he has to be a slave to their every whimsy. If some creators think that all fan interaction is good interaction, thats fine, if a creator doesn't like something some people do thats also totally fine. A creator is allowed to not like certain behavior from fans, just like fans are allowed to not like certain behaviors from creators. It goes both ways not one way. Obviously annoying questions is super mild behavior either way, but by your logic things like stalking or lashing out at people not liking sungwon or other behavior is okay because its interaction. Thats not how it works, if fans want something a creator dislikes they can always find a different fandom that is better for them. A less extreme comparison is how some streamers are totally okay with the audience backseating, some streamers permanently ban backseaters to not be allowed to chat. To each their own, on both sides of the equation.
