A little fun fact about the bird eating the hot cheeto: it's not just "some" birds, it's _all_ birds! Well, capsaicin _can_ still be toxic to birds in high amounts, but they can't actually taste the spice, as they lack capsaicin receptors! Afaik, only mammals can taste the spice from capsaicin. This works to the peppers' benefit, since, like most fruits, birds eating them is integral to their ability to spread. The birds eat the fruit, they fly around, they shit, the seeds come out with the shit since they can't really be fully digested by birds iirc, and the seeds then propagate wherever they land. Birds wouldn't eat peppers if it was painful to do so, so capsaicin protects the peppers from predation by animals that wouldn't travel as far as birds, making it easier for them to spread. I am not aware of any other theories that credibly explain fossils, or have correctly predicted the existence of _any_ type of fossil before it was discovered by digging. But Evolution has. That makes it a very good theory for how animals change over time.
