Hey Sam, thanks for pointing out that the brown holes in the potatoes are fine! I grow my own potatoes and have had a load of them develop "hollow heart" this year due to inconsistent watering, and it's really refreshing to see someone actually show it - and actually state that it doesn't matter - in a video. :)

I've always wondered what that was. I got a bag of potatoes from the store that was like that. I threw them out thinking it was blight. Totally in the middle, definitely freaked me out.

@Shaun Dance - In my case the brown holes were there as they came out of the ground. At first I was worried it was blight, then did some goggling. This is the first year I've grown potatoes in buckets and I am pretty sure I over watered then under watered, which caused it to happen in potatoes from a number of buckets. I suspect they won't store as well (they're all in sacks, in my garage) but it's all a learning experience. I was just pleasantly surprised to see someone actually address it in a video, as most people would probably think the potato was no good.

I dunno, guys. I grew up on a potato farm and any spud out of the ground that had a hole in it, led to a tunnel that led to a (what we called) cut-worms, think they were larvae for some type of moth. Fortunately I forage at a supermarket now, in my old age.

This is an excellent method to fixing up the issues with sweet potato fries, which are much more waxy and less starchy than regular fries, so they tend to get soggy when fried the same way. They will still be soft in the middle, but the batter crisps them up quite a bit. Just use 1/2 c of cornstarch and 1/2 c of flour, then mix in your 1c of water and go from there. Make sure you soak them in water for at least a few hours beforehand, too. 375F for about 7-8 minutes.

Grew up in Rochester, NY, and there are plenty of restaurants that serve fries (crinkle cut) with gravy. I thought this was a perfectly normal fry condiment until moving to Arizona. Fries with gravy are the best!

Sam, a little tip on beef gravy is to add Kitchen Bouquet. When l was growing up, all the old farmer/rancher wives used it. I still buy and use it to this day. Great flavor enhancer.

Thank you for making a quick gravy from broth. I use to do this in a pinch and my ex husband would get mad at me and call me crazy and stupid, so I stopped doing it along with many other things (note the ex husband part, but still some what ruined my confidence). @@chellee I had to respond because I lmao at your "floor sweeping" remark, my ex said the same thing about my sweeping. And he'd misplace things (utensils, cheese shredder, scissors, ect.) that I would use daily while doing chores, then tell me that I misplaced it because I used it last. Then he would "find" it and wait for his reward of praise and thank you's. They're not happy until you lose all self confidence, and question every decision you make. But, over time we heal and get stronger every day. Being free from their poison is better than having Christmas every day, Congrats to you for moving on and finding real love. I'm not looking for that yet, and probably never will. For now, I'm happy being alone and doing what I want, when I want. Godspeed.

@@estherc.536 I know the both of you don’t need to hear it from me but I wanted to drop a kind comment of congratulations to the both of you. Not a lot of people have the self awareness and strength to pull themselves out of abusive but you both did it and that’s inspiring. You also don’t need to hear this from me, a complete stranger, but, please don’t ever give back into that doubt because of their nonsense. It’s ok to make mistakes. Those are just opportunities to learn a cool, new way to try something. Especially when you’re trying something new for the first time. Both your ex’s should have stopped criticizing you, man’ed up and actually helped you with things around the house instead of just pointlessly criticizing. I’m a doctor and I’m not above sweeping or cooking or any household chores. They’ve got to be done, it doesn’t matter who. It’s just common sense, labor goes by quicker with more hands, eyes, and minds. Rewatching Mr. Rogers episodes helped and still helps me get over the abuse of my previous relationship. When I was down, Mr. Rogers told me to look for the helpers. I’m not silly enough to say I was perfect during my last relationship. I’m not faultless. I have struggled with anger all my life and I tend to lose my temper over serious things. But I try everyday to be a better man. I’m trying to replace my anger with passion and openness. My ex was narcissistic too, she knew I was struggling with anger and would say and do awful things to purposely get under my skin, purposely mentally and physically provoke me, just so she could play the victim, take all of my frustrated words, and make me feel like a horrible, heartless monster and then she’d guilt me into serving her every whim as “penance.” Never doubt yourselves. You are talented, wonderful individuals. You are worthy and you are enough. And just like Mr. Rogers used to say, I like you just the way you are. I have a wonderful fiancé who found me at my lowest and she showed me so much compassion, love, and understanding. She’s been such a gift, supporting me and helping me overcome my temper one day at a time. She’s helped me undo so much self-hatred and she’s re-taught me that I’m so much more than a monster and that I am human. Congratulations on finding your tag team partner, Chelle. And Esther, I found in my experience, love finds you when stop looking for it. And it finds you when you least expect it. Please enjoy your time with yourself and I hope you are able to spend your days fruitfully, vibrantly, and self-lovingly. Who knows, maybe your tag team partner is just around the corner.

So common growing up in Vancouver. Then I moved to the US and it took me a while to realize it's not really a thing down here. I've taken to ordering a side of brown gravy (because if you don't specify your just as likely to get country gravy) with my fries when I go to a diner. They usually have it for pot roast or hot beef sandwiches or something.

I have exactly the same. You don't need a deep frier to fry, just a heavy pan, (to avoid accidents) fill half of the pan with oil and turn on to 5 (on my hobs anyway, my hob dials go from 1 - 6) then fry when it's come up to a decent heat. I do my own chips/fries all the time without a fancy frier, never tried battered but I've done battered fish countless times, definitely gonna try this sometime though.

My mother always had a thing about not being wasteful. Her potato peelings were soaked in water. Then soon dry in a salad spinner and fried with butter and used as a topping for scramble eggs. Unbelievable good

Sam, next time you are in the UK, come to the Midlands, we have what are called orange chips that are sold at our fish and chip shops. They are basically battered and seasoned chips and they taste amazing!! You need to come and try them!! Take care, love the content!!!

Fry the fries in beef tallow for the extra beefy flavor. Of course the beef gravy is a fantastic idea. Although for a go-to dip for fries? Regular tartar sauce or ranch dressing is good, some sort of garlic butter for tots if they're very crisp. A melty cheese sauce with bacon crumbles mixed in.

My late Mom would make her tempura batter in a similar way, except she would add some beer in the batter and combine potatoes, carrots and greenbeans and fry them in a small haystack style. So delicious and had all the adorable bubble bumps like your fries. YUM!

Fritters in Scotland are similar but slices of potatoes and you typically get them in the fish and chip shops. Nothing better than a fritter roll tbh. Prob a bit easier to make than battered fries as well

Instead of regular batter, try beer batter. Use beer instead of water. Absolute YUMMO! You still get that crispiness that you get with regular batter, but it adds a little something else. Love the look of that simple gravy. I'm definitely going to make that.

Those bumps are from the bottom of the fry basket, to avoid most of those just give a shake when each one hits the bottom and it should unstick/float to the top.

I always batter my homemade fries when I make my Chilli cheese fries the batter helps the Chilli stick to the fries but I pre cook the fries for like 2 to 3 mins throw them in the freezer to cool them down . Then batter then cook for another 5 to 6 minutes best fries hands down

I just put my seasoning in the flour and shake them up. Then shake off any excess flour and fry them. I will have to try the gravy. Thanks for another great idea!

I wish we could have an honest discussion about meal kits. Every person I know that has tried them has gotten tired of it and canceled. Meanwhile, you have the crowd that have tried it for a few weeks and are glowing with positive input. There's no middle.

aussie way is beer batter chips (fries) with a pale ale. omg sensational. when you have chance try that (with pepper, salt, garlic and if you are adventurous also onion powder too.)

Have you tried double frying ? Lightly fry the plain potatoes then dip them in the coating and fry again.

I remember my aunt made a grilled cheese bowl with garlic bread with tomato soup and deep fried mac and cheese balls she also had sourdough stuffed dumplings in her chicken and dumplings they had cream cheese and mystery item like chicken , chives ,bacon , crab , ham and spam when you bit one you never knew what it would be my great grandma would make a cabbage soup that was so good even the 3 year old me liked it she would have bacon drippings red and green cabbage would blend some cabbage corned beef bacon spam carrots peas corn beets onions with beef broth into puree then put it in beef broth and cabbage at half cooked point and cream cheese is put in at end about 10 min before done it is flavorful and creamy

In England these are a famous dish from the region known as the "Black Country", west of Birmingham. They are known as "Orange Chips", due to the Orange batter they're dipped in before frying, and originate from WWII when civilians tried to find a way to break up their regular, monotonous ration food. Super cool you made them! im not sure if it's common US knowledge that they exist in England as a regional dish so now you know:)

Down south we have Beer battered fries in frozen bags from the Supermarket, I like to make them from Sweet potatoes probably the only way to make Sweet potato fries or Chips as we call them leave the skins on tastes better

What about two-step fries? Put the plain fries in the oil until they're no quite ready. Take them out and drain. Then, dip them in the batter and fry again. Double crunch?

Thank God! Someone who actually peels their potatoes before making fries! I detest potato skins, especially on my fries but it seems that most restaurants are too cheap to buy a potato peeling machine and just use the worn out "all of the goodness is in the skin" lie. Nope, pure laziness. There is no "goodness" left in a fried potato skin.

I don't think it's available in most of the US, but in Utah and the Pacific Northwest, Lot of people swear by "Fry Sauce" which is usually just a combination of Mayo and Ketchup. I believe Heinz even bottles it now.

YES GRAVY FRIES!!! In my part of Southwest Montana they were a huge favorite when I was growing up in the 60's and 70's. Most of the resturants and drive-in's ( does this date me?) served them as a side or by themselves. Now these crispy fries will be a addition to my home cooking arsenal of STCG recipes!!

If as your shirt says “If fat means flavor” then I imagine that you could also make a roux instead of the cornstarch/water mixture, and it would be better/more rich in flavor

and use beef tallow to fry them. I think you'd still need cornstarch to make the batter stick through the cooking process and to make them crunchy.
