You just helped me out no end. All 12 members of my family are coming to stay for the weekend.Fortunately I have a big house and can sleep us all under 1 roof.My son his wife and 3 teenage daughters.My eldest daughter,her husband and teenage son,plus my youngest two daughters and their spouses. I’m 72 now and love cooking,and used to cook for up to 30 people at once,but I’m a bit slower and tire easier now. This dish is definitely going to be Sunday dinner.Plus I will have plenty of helpers.My 3 granddaughter’s and 1 grandson who always want to cook with me when they’re here.(I have no problems with child labour😀). One of my granddaughters is studying food and nutrition,and food science at school which involves cooking too.The last time they came down she threw me out of the kitchen and grabbed my other 2 granddaughters to do prep work and washing up. She cooked a wonderful 3 course meal for 7 people.Afterwards she told us that she’d never cooked this particular menu before,and that we were her gunea pigs. It was so good we all said we would pay good money if served it in a restaurant. I live in Essex in the UK. Love your dishes. Would you be able to do one using pan fried spiced fish fillets please?I can never get them right.Bless him my husband never complains.We’ve been married for 54 years.Would love to get it right for him.

Marion, It’s because of you that we’ve started to really enjoy a curry. It’s not a big thing here in NW Pennsylvania, US. But it has become “a thing” here at our farm house. Again-Thanks for the inspiration. I’m going to make this recipe on Friday after I can visit my local farmer with non-gmo natural chicken! Cheers!!! (Currently making a random delish “Marion inspired” ramen shrimp soup for dinner.

Wow. I made this last night including the fried rice. I even found tired old lemongrass at Woolies here in Stanthorpe. I used thigh cutlets and drumsticks. It was beyond fabulous. It will be a regular from now. Just make it people as you won’t regret it.

This is vietnamese curry. Very light and mild spices while Indian curry will punch you in the face with spices like cardamom lol

Hey Marion. Ive just cooked up your chicken tray bake. Ive done it slightly different though. Ive used chicken thighs instead of drumsticks. Brown onion instead of red and just diced it normal instead of wedges and I've used some normal brush potatoes instead of carrots. Just made just made plain white rice tonight, no fried rice. Kitchen is currently smelling really yummy cant wait to try it Verdict: Just tried some potato, its delicious. I cant taste a hint of the lemongrass through it. Really yummy. Unfortunately we aren't arent all that hungry right now. Gonna eat it a little later. But its gonna be yummy

I often find myself not watching these "Make it Wednesday" videos because its so easy to skip without seeing the actual dish that is being cooked. I LOVE watching your videos and think having a thumbnail that actually includes a picture of the dish will entice more people to watch the video! I know I've personally skipped the last few ones subconsciously and I'm so glad I clicked on this one to watch!

I find that sticking the onion into the fridge for an hour or so before cutting really helps to reduce the tears! Also having a recently sharpened knife helps because it lessens how much onion cells get crushed

Thanks for the recipe from San Juan Islands, Washington State… made it with salmon instead of chicken. Crisped the skin side first and added to the bake half way through… everything else exactly the same… sauce and veggie combo was great with salmon.

Made this Saturday night and it was delicious, must admit didn’t make the fried rice. this yummy dinner will appear on my menu plan again and again. Didn’t have carrots so I used a sweet potato and that worked out fine. Ps thanks Marion hubby really loved it, took us about 10 mins together to get it in the oven.

Original vietnamese curry uses sweet potato instead of carrot but in Australia we tend to use carrot as a substitution because sweet potato is seasonal and carrots have lower carbohydrates. You can even use regular potato.

I am vietnamese and I don't really like chinese sausage as well. Our family would just use ham or bacon or just leave it out completely since there is so much flavour and protein from the curry.

One of the failsafe things about onions and tears is a trick handed down from my great grandmother. If you know you have to slice up heaps of onions, put them in the freezer for 1 hour beforehand this doesn't freeze them but stops the juices coming out that cause the fumes!! Never had a problem using this technique!!
