There's a really popular place for getting water near where I used to live. Found out that farm run-off gets into the stream before it reaches the collection point though... haha. Thankfully I never used it; I'm only really into getting spring water when trekking/hiking.

@@cakewave Natural springs like that are extremely clean they are naturally filtered by itself, we have them in sweden also in some areas. though, only the local people know of them. No, you do not need to filter those kind of water springs, also the water from them is EXTREMELY TASTY :)

Yuba/湯葉 is often sold dried in America, so it is called “dried tofu skin”. But in Japan it is often sold fresh, so just “tofu skin” is good. But I think YUBA is a good name to use. If you have never had YUBA before, think about if you heat a pan of milk and a skin of milk will form on the top, kind of like a sheet of coagulated milk. That’s how they make Yuba. The soymilk is simmered and a skin of coagulated or firmed up soy milk will form on the top and that is taken off gently and sold separately. They keep simmering the soymilk and gently take off the firmed up Yuba till it’s all gone. It’s very soft and delicious served with a bit soy sauce and wasabi. Ryoya: how about a video showing how to make fresh homemade Yuba. And show some serving ways... Also, it might be useful to show how to use the dried type for people who can’t get fresh.....

Everyone is so friendly at the farmer's market, I love going to the ones near me, too. The farmers are always so happy, and that love and care makes their food taste even better, I think (also buying local helps, the produce is picked at the peak of ripeness instead of shipped from afar). Yuba in English is often called "tofu skin." The thick layer that develops on boiling milk (cow or soy, like during the process of making pudding or tofu) is called "skin," so yuba is "tofu skin," if it's made during the process of making pudding it's "pudding skin." It sounds a little gross thinking about it, though, I prefer "yuba," haha.
Getting up so early to fetch water and get fresh produce seems so calming, and peaceful lol 😅 Such a lovely little market!!

I love the early morning atmosphere, it’s so peaceful. Growing up as a child of nine siblings, I used to woke up at 4am, while the rest of the family was still in bed. my father would be awake to receive our fresh bread delivery from the bakers. I’d eat those fresh bread with butter and our dogs jumping at me like they hadn’t seen me in a million years. I shall try to wake up at this hour again
