Just back from travelling Thailand and Vietnam. I highly recommend going to Chang Mai yourselves guys and attend a cookery school if you can. It is awesome. I have learnt such a lot from the classes.

Hi Marion! Love you! Question about your Mako wok, how do you use acidic items like tomatoes without stripping the seasoning or patina??? I wanted to ask you about this when you made bolognese that time.

Using any acidic stew or sauce and simmering it for a long time will be an issue (as it will for any cooking vessel with a seasoned patina). But I didn't have an issue with my quick bolognese so 15-20 minutes is fine. Also, even if the patina on any seasoned wok or pan is ever compromised, it's really just a matter of building it up again. It doesn't actually 'damage' the material itself. I hope that makes sense?

Marion, do you know of any gluten free thai style soy sauces like you mentioned? I'm limited to Kikkoman and another brand as they are the only ones I can find that are GF - any help would be AWESOME!!
