Thanks for the ideas. Appreciate it. I also have a brass bristle broom the sweep out the oven, and a metal launching peel with holes in it for the flour to go through.

Any specific peel you recommend? Looks like you have a nice metal perforated peel I'd like one if possible to launch and retrieve pizza

Hello and thanks for watching. Yes having a nice aluminum slotted peel is a great addition to your pizza making tool kit. My go too peels are 1. for launching pizzas into the oven, i would recommend something like this one to start with a.co/d/c2xfTsK 2. For turning the pizzas and removing them from the oven i would recommend one like this. a.co/d/e5qtogU 3. Depending on what size oven you have, it you want to make pizza's a bit bigger you could get something like this a.co/d/4XBrXeI

Hi Matt, I recieved my new emozione oven and it came with 3 biscotti, one was cracked and they told me the stones are not under warranty but that they would make an exception, if I recieve another cracked stone can it still be used? Thank you Nat

Oh no!! hopefully you got the Saputo Biscotto stones, if so you're in luck because they can crack and it doesn't effect the use at all! unlike a refractory stone if it cracks it impacts the heat and insulation and won't cook evenly. As long as you have all of the pieces you should be good, i would just put the broke part in the back and burner side if possible or in a spot to give you the best surface possible.

I ordered an Epoxy that repairs the crack up to 2000 degrees, you think it's worth repairing it, it's $27.00 canadian

With the Biscotto stones, unless they are so broken up that you don't have a flat surface to cook on then in most cases they are fine broken a bit. I have one of my corners cracked off about a 4" by 5" inch chunk from me dropping it, i just use it as is and put the chunck back in the corner.@@natalinopascuzzo8345
