I think it's a difference between disguising the food crime with something that would taste good without it and embracing the food crime to make it taste good as itself. You can see it here where with Nicole's dish you wouldn't immediately guess that its inspired by a jello dish, but with Josh's dish it's clearly still a jello dish but its been elevated to something actually tasty.

@@ARabidPie also, Josh always seems to go for flavors that most people (at least in the US, I think) would like without requiring an explanation. Nicole sometimes has to tell people what her food was supposed to be like (like here, serving gazpacho to someone who was reading the thing as lukewarm soup lol). If you create good, complex flavors and package it in a way that is fun or makes sense to most people, that's 90% of the way towards 1st place.

Eh, it makes sense. Josh is an expert at making weird dishes, while Nicole is an expert in making dishes weird. Remember the time when she made dill pickle soup and added *CREAM* to it for some reason? The acidity of the soup made the cream curdle, which made Rhett and Link hate the soup. This losing streak is her atoning for her food crime.

I think it is because Nicole has a more formal culinary background than Josh does. I’m going to keep going with @LordDragox412’s example, putting cream in soup is a very common topping with multiple soups like tomato and mushroom. So she probably put it in because it’s what she learned. Hell, I learned to put cream as a topping for tomato soup as well but never learned why. Every time I make tomato soup I leave the cream out of the recipe because I think it tastes better without it. Formal education can be a crutch, because they teach how to do things without ever teaching why you should do it.

Storytime! My High School Band teacher (RIP Mr. Wills) One day came in and told us about something he heard on NPR. It was about the rising amount cats being diagnosed with Feline Leukemia. Good crimes are one of those where you have to embrace the weird about it. Nicole always tries to fancy it up and bury/run from the food crime and ends up losing the essence of the dish they are trying to worn around. Josh embraces the weird and keeps it forward in his dish. I’m sure Nicole’s dish tasted good but it also probably didn’t remind anyone of a jello lobster at all.

it's because Josh grew up poor and Nicole was always well off/rich (from my own low income pov). When u dont have a lot of money, you start getting creative with the limited food you can get especially if you had to go to a food pantry

Useless jello fact: Jello dishes have been going in and out of fashion with rich-people dinner parties for centuries. The mid-century iteration of it was inspired by the availability of cheap and easy instant gelatin. It brought what was once a resource-intensive and time-consuming recipe (you had to cook a whole lot of meat scraps and bones down for a very long time to extract the gelatin) to the average middle-class table for the first time and everyone wanted to show it off.

13:30 I couldn't agree more Josh. Nicole's 5 tiny pieces of cucumber jello floating on top of her soup is not at all reminiscent of a jello dish. Sure she used a little bit to thicken the gazpacho but anyone who didn't see the cooking process would have no idea. Her outrage at Josh dissing her single spoonful of jello in an entire bowl was so funny too. Because she's so entirely off the mark. Especially in a dish where the judges aren't eating the entire thing. They could easily miss the jello (and that single sprinkle of allepo pepper), especially with a giant piece of lobster in the middle.
