These Namak Pare, Shakkar Pare, Gud Pare can be made ahead and stored for a month at length. The right amount of ‘moyan’ or shortening with ghee helps to increase the shelf life of these Namak Pare, Shakkar Pare, Gud Pare.

Recipe :
Namak Pare
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1 cup flour
¾ tsp salt
¼ cup semolina (rawa)
¼ tsp carom seeds
A pinch baking soda
¼ cup ghee
Oil to fry
½ tsp salt
½ tsp red chili powder
½ tsp black pepper powder
1 tsp chat masala
Method:
Mix together the flour, semolina, salt, baking soda, carom seeds, melted ghee and rub till it resembles bread crumbs. Add a little water at time and knead to a stiff dough. Rest the dough for 10 minutes. Roll out the dough to a thickness of 2 mm. cut into diamond shapes. Fry in low-medium hot oil till golden and crisp. Remove to a plate.
Mix together the red chili powder, black pepper powder, salt and the chaat masala. Sprinkle over the namak pare and toss well. Cool and store.
Shakkar Pare
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1 cup flour
1 pinch salt
1/6 cup semolina (rawa)
A pinch baking soda
¼ cup ghee
Oil to fry
1 cup +1 tbsp sugar
Method:
Mix together the flour, semolina, salt, baking soda, melted ghee and rub till it resembles breadcrumbs. Dissolve the 1 tbsp sugar in ¼ cup water. Add a little water at time and knead to a stiff dough. Rest the dough for 10 minutes. Roll out the dough to a thickness of 2 mm. cut into 1cm squares. Fry in low-medium hot oil till golden and crisp. Remove to a plate.
Cook together the sugar with ½ cup water in a pan to a syrup of 2 string consistency. Add ¼ tsp baking soda and remove from heat. Add the fried squares and mix well. Keep mixing and tossing till the sugar begins to crystallize and coats the shakkar pare. Cool and serve.
Gud Pare
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1 cup flour
1 pinch salt
1/6 cup semolina (rawa)
A pinch baking soda
¼ cup ghee
Oil to fry
1 cup grated jaggery
1 tbsp sugar
Method:
Mix together the flour, semolina, salt, baking soda, melted ghee and rub till it resembles breadcrumbs. Dissolve 1 tbsp sugar in ¼ cup water. Add a little water at time and knead to a stiff dough. Rest the dough for 10 minutes. Roll out the dough to a thickness of 2 mm. cut into 1cm squares. Fry in low-medium hot oil till golden and crisp. Remove to a plate.
Cook together the jaggery with ¼ cup water in a pan and bring to a boil. Cook for 4-5 minutes. Add ¼ tsp baking soda and remove from heat. Add the fried squares and mix well. Keep mixing and tossing till the jaggery begins to crystallize and coats the shakkar pare. Cool and serve.
