Le passé recent - Ils venaient d’ouvrir un restaurant. But in passé recent we conjugate - Ils viennent whereas Ils venaient is conjugation for imparfait.

Excellent idea. In the last example going to china has already happened and it is a fact so why do we need to use the subjunctive? Why not use the indicative and say: je suis surpris(e) que tu as visité la Chine.

It's because you need to use the subjunctive (past in this case) after an expression of emotion: Je suis surpris(e) que... It is a fact that it happened, that's true, but the past subjunctive follows the same rules of usage as the present subjunctive.
