Nana’s Best Banana Bread Recipe
Ingredients:
3 ripe bananas, mashed
1/2 cup (115g) unsalted butter, melted
3/4 cup (150g) sugar (you can use granulated, brown sugar, or a mix)
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups (190g) all-purpose flour
Optional Add-ins:
1/2 cup (60g) chopped walnuts or pecans
1/2 cup (90g) chocolate chips
1/4 teaspoon cinnamon (for a warm flavor)
Instructions:
**Preheat your oven to 350°F (175°C). Grease a 9x5-
inch loaf pan or line it
with parchment paper.
**Mash the bananas in a large mixing bowl. Add the
melted butter and mix
until combined.
**Mix in the sugar, egg, and vanilla extract. Stir until
smooth.
**Sprinkle the baking soda and salt over the mixture
and stir to combine.
**Add the flour and gently fold it in until the batter is
just combined. Be
careful not to overmix.
If using add-ins like nuts or chocolate chips, gently fold them into the batter.
**Pour the batter into the prepared loaf pan and
smooth the top with a
spatula.
**Bake for 60-65 minutes, or until a toothpick
inserted into the center
comes out clean.
Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Creamy Vanilla Icing Recipe
Ingredients:
1 cup (120g) powdered sugar
2 tablespoons unsalted butter, softened
1/2 teaspoon vanilla extract
2-3 tablespoons milk or heavy cream (adjust for desired consistency)
Pinch of salt
Instructions:
**In a mixing bowl, beat the softened butter until
creamy.
**Gradually add the powdered sugar and continue to
beat until well
combined.
**Add the vanilla extract and a pinch of salt, and mix
until incorporated.
**Gradually add the milk or cream, one tablespoon at
a time, until you reach
your desired consistency. The icing should be
smooth and spreadable but
not too runny.
Once the banana bread has cooled completely, spread the icing over the top. You can also drizzle it over the bread for a lighter touch.
