INGREDIENTS for dough:
6 cups of millet flour, 8 cloves of whentia (AKA, grains of selim), 5 dried chilis (optional), 1/4 cup of chopped ginger, 1 teaspoon of cloves, 1/2 teaspoon of black pepper corns, 1000 ml of water.
INGREDIENTS for koko:
1 cup of millet dough
1 litter of water

Yay, Nanaaba, that's it! 👋🏻👋🏻👋🏻 Now, ferment the rest of dough for a day or two, portion them into Ziploc bags, and freeze. Anytime you're ready to make Hausa koko again, you simply thaw one, and mix thinly with water. Bring water to a rolling boil, then turn stove off, and add your diluted koko mixture! Super simple. Less work, more flavor and nutritious fiber!

Yes I used to buy millet flour from an Indian Supermarket to make Hausa koko. Great to use in the absence of whole millet. You went above and beyond with the tutorial. Y3 daase ooo Onuawaa🤗🤗❤❤.

Nice. In case you are using raw pearl millet, may you try (dry) roasting the millets a bit (say for abt 5 mins or so, allow it to cool) before allowing them to rest in water. We do this in India to slightly enhance the taste of the final koko. Enjoy cooking 👏👏

Instead of adding additional water try adding Milk..Not just enhances taste but adds lot of calcium..You may also add either salt and pepper powder or you may choose to add palm jaggery..

Made simple this time with the millet flour.I used fermented corn dough together with whentia,cloves,ginger, 1 chili 🌶 pepper blended it together and sieved it 3x with my boiled water on fire added the mixture and it came out perfect 👌 like the millet porridge with my koose .Thanks to this wonderful woman@Nanaaba’skitchen.God bless you so so very much.Ill buy the millet flour and it .👏🏻👏🏻👏🏻

You can get a smoother blend of the spices when you blend with less water. I do this then add more water once it's blended smoothly.

What will be the best way to make the raw millet into powder please? Soaking it with water or without water ? Thank you

Use a really good blender to dry blend it into powder. I recommend washing the millet first though, then spread out on clean paper napkins on a sheet pan and allow to air dry in the sun till bone dry before processing to powder.

I live in Virginia and buy mine in an Indian Store near my house. I imagine you can find it in any Asian or Middle Eastern store in your town.

Everyone does the staples like rice, eggs, and potatoes but I want to learn about those ethnic/regional products, and techniques to elevate them, or elements of surprise where savory become sweet, or where some produce best enjoyed raw is cooked. Lol. You are just the perfect fit with your storytelling and creativity. Please demystify ingredients as much as you know how coz even grocery shopping can be daunting. Imagine if people knew how to make most ingredients. It would reduce food waste, support farmers, lower food prices... Okay.. I will stop producing your show 😂
