* 1 Tbsp aniseed
* 1/2 Tbsp cumin
* 1 Tbsp coriander seeds
* 6 star anise
* 2 Tbsp white pepper corns
* 1 cup chopped ginger
* 1 cup peeled garlic
* 8 fresh sprigs rosemary (Substitute with 6 Tbsp dry rosemary)
* 4 sprigs fresh sage
* Optional 4 Fresno chilis
* 20 small red onions/ shallots (substitute with 4 large onions of any kind)
* 1 green bell pepper
* 1 bundle cilantro/ 1&1/2 cups
* 1/4 cup total of extra virgin olive oil
* 1 bundle parsley/ 1&1/2 cups
* 10 Serrano chilis optional
* 10 scallions
* juice of 1 lemon
