I wish I could speak and read Korean! I think the point of this video is that the Bess score is higher than expected given the cutting performance? If that is right then maybe you have a wire or foil edge on the knife and rather than remove the burr you have refined it to a wire or foil which is collapsing when you test it on the medium of the Bess tester?

The purpose of this video is to demonstrate the deburring ability of a coarse Resin Diamond stone(50micron). As you can see, it's not perfect, but it worked pretty well. I think this stone is very different from the other common ones. It's like a very hard strop.
