This is my new number one channel and I've never eaten bbq meat before because I seem to only like roast chicken and sometimes roast lamb. I've been wanting to cook pulled pork for quite a while now though. Last night as usual I couldn't sleep because I was in too much pain (I'm 40 and terminally ill) so I watched hours of your videos to distract myself. I try to control as much pain with mindfulness and I'd like to say 'THANK YOU' for your hard work in making the videos as I know a lot of work goes into them. You have helped me immensely with my pain and you have motivated me to try pulled pork when I have one of my better days. Xx

I forgot to say that out of all the people who have bbq channels on youtube you are for sure the best at teaching us how to do it. You are concise, speak cleary, give us all the details including the recipe typed on screen, you have a huge range of videos/recipes and on top of all that you encourage us to do it as well. Before I got sick I was a primary school teacher here in New Zealand and I know a good teacher when I see one. I hope you and your family are doing well.

Just made this recipe up and it's great. I added 1/4 pickle brine to the hot sauce mix and it made a huge difference, definitely recommend.

I made the Nashville Hot Chicken and Blue Cheese Biscuits for 6 of us last night. The chicken turned out fantastic and wasn't nearly as spicy as I was expecting. You can definitely turn up the heat ! The blue cheese biscuits were pretty difficult to work with. Definitely make sure you have PLENTY of flour on your rolling surface and plenty on top of the dough as well. And as advertised, make sure you have an excellent pot holder when pulling your skillet from the smoker! All in all it was another A+ meal thanks to Malcolm!

First some background: Last week my wife, my son and I waited in line two and a half hours on a Sunday afternoon to order Nashville hot chicken from a VERY popular spot in Los Angeles (I'd normally never do such a thing, but it was my son's birthday, and that's what he wanted). The chicken was pretty good, but not life-changing good, and definitely not worth a two-and-half-hour wait. Yesterday I made this recipe on my performer (with the vortex) and I guess my thighs must've been on the small side because they were at 170 in 20 minutes...glad I was checking them. Anyway, it was OUTSTANDING, much better imo than the chicken we'd waited in line for. Big hit with the whole family; I'll be looking at your recipes for more brilliant meals! Thanks!

I love his new setting. It's much better than that yellow kitchen. Southhaven, MS. Most White Peeps gave up on Memphis after Willie 'The King' Herenton invited all 'The Blue-eyed Devils' to get out of town. Well,they did...For better or worse. Worse for Memphis, but that is yet another story. All that is important is that Malcomb can BBQ and Smoke like some sort of Ninja. Best channel EVER.

The gauge was pegged out but I’m guessing rack temp was about 450-475 based on the cook time. Always go by internal temp though especially on poultry.
