What I like to do every other Friday is go through my vegan cookbooks and pick meals for the next two weeks. I pick two dinner and two lunches for one week, then another. I pick meals that share the same ingredients. I grocery shop at the farmers market for most of my fruits and veggies, then at sprouts. I only grocery shop every other Saturday and buy for two weeks. I also avoid buying things in cans and plastic packaging as much as possible. I have been vegan for 11 years this March.

This meal prep is great! Also, I never knew that food processors can shred things! I’ve owned a food processor for years now and also wondered what that metal plate attachment was for. Be right back…going to shred all the veggies now!!! 🤗

Now I need to take the next step and do it! I like the organization and the color in the food choices. I was hungry after a long day of work today and was so happy not to stop and by something on the fly but made it home and had some wild rice already prepped and sautéed red bell pepper, sweet potato in Tamari and then added some rice, an egg and peas and it was yummy and satiating. I need to try doing tofu in the air fryer and use tools I have in the home more such as a mandolin and food processor. Thanks so much Natalie, this is the year I am serving my body in the way it needs to see strong definition everywhere. Love your sweet energy and clarity and speed of speech. It is not too fast, which really matters. You are doing great!

I love the Lupini bean seitan. It's my go to. I soak my own beans as I couldn't afford to keep using ready to use ones. I'm enjoying your cookbook! I love the high protein veggie tots. The breakfast sausages are great!

I like to use a silpat to cover foods in the oven instead of foil or parchment most of the time. I'm glad you didn't get beet juice on your beautiful purple top! 😅

Yes! That way you can make different dishes (Mexican, sushi bowl, or Italian dish) using tofu but switching a sauce or condiment.

Do you have any specific tips for storing/using cooked rice? I've been nervous about cooking more than I can eat in a few days after reading about the bacteria (bacillus cereus) which lives on dry rice and starts to grow as soon as rice becomes wet. Apparently it is not killed by cooking rice and will continue to grow on cooked rice no matter what (though refrigeration slows the process down). How long do you keep your cooked rice for?

4-5 days refrigerated...you can also wait until it's completely cool and freeze. Freezing is the best way to keep rice.

Love this! Got my calories & macros redone the other day via Evolt machine, so I am trying to figure out that sweet spot of trying to up the protein (165g) while not going over on the carbs (124g). I know your seitan recipe fits, so I plan to make some more of that. Jealous of the space you have to prep a whole week out!

First video of yours I've watched - subbed! I just recently discovered blanching for leafy greens, from "The Vegan Chinese Kitchen" - have done spinach, potato greens, even romaine. 🥬 They were all amazing! The hardest part is just washing those greens really well with multiple rounds of dunking. Haven't tried asparagus yet - but that's next! Can't wait to explore more of your channel.
