I was asked about freezing sprouts and searched to see if myrosinase is destroyed by freezing and found this to be interesting: "Broccoli sprouts were directly frozen at -20 °C (DF-20), -40 °C (DF-40) and -80 °C (DF-80) or stored at −20 °C (LN-20), -40 °C (LN-40) and -80 °C (LN-80) after frozen in liquid nitrogen for 5 min or always frozen in liquid nitrogen (LN). The effect of these treatments on glucoraphanin and ascorbic acid content, myrosinase activity, sulforaphane and sulforaphane nitrile formation in broccoli sprouts was investigated. Results showed that glucoraphanin content was not significantly affected by freezing. Treatments of DF-20, DF-40, LN-20 and LN-40 for 24 and 48 h enhanced myrosinase activity and decreased ascorbic acid content. The enhancement of myrosinase activity after freezing was in parallel with more sulforaphane and less sulforaphane nitrile formation. Besides, freezing at -20 °C was more favorable for sulforaphane formation than -40 °C. Mustard is made by soaking mustard seeds then crushing those seeds with a mortar and pedestal. Vinegar and turmeric, etc. are then added. No heat or cooking is involved.

For whatever reason mass produced store brought mustard is heated quite a bit. I work in a laboratory that frequently tests store brand condiments in the US. The mustard often comes in hot enough to melt the plastic container.

I’m 62 and vegan for 7 years. Recently started my raw food journey 3 months ago. I have perfect blood work and take no medications. I love Dr. Greger’s videos and lectures. Listening to the lectures I learned something shocking. That back pain is related to clogged arteries. I never knew this. I was a caregiver to my elderly parents and my grandmother for 17 years. None were overweight. All ate the Standard American Diet. All had arteriosclerosis from eating animal products 3 times a day for life. All took high blood pressure medications from about age 40 for the next 40+ years of their lives. All had heart disease, suffering strokes, congestive heart failure. My mother always complained of back pain. I now realize her pain was probably related to clogged arteries in her back.

We don't hate you, we feel very very sorry for you. I watch the vegan doctors for entertainment. Usually as I'm cooking up my daily flesh meal. I am recovering from years of vegan and vegetarian abuse to my body and I do feel very sorry for those of you who haven't woken up yet. You have good hearts, but you are destroying your body, slowly, ever so slowly. But your mind is going to. If your body goes before your mind, you might figure out that it's your plant based diet. The die hard vegans have lost their minds and ability to think critically. Do I believe in your corrupt science or what my own body is telling me? Do I trust Gregor or myself?

Now that we have those diseases under control we live longer and have short health spans that can be prevented, treated, and even reversed by a plant based diet. Now we still die from eating animals but from new diseases in our new lifespan. So eating animals never was good for us and still isn't. We should be eating outside of the animal kingdom. What's best for us happens to be what's best for all animals and the entire planet!

Many Americans are happy to insult anyone who is of healthy weight because they are in denial to themselves that they have serious weight issues. I don't think I called people too thin but I definitely was in denial about my own overweight. My boss one time said we are all big guys, and it was true. I forget what we were talking about, but I denied I was too heavy, which I was. Best wishes

Proper nutrition, covers your internal health. Hair, is genetic. He mentions disk degeneration and sciatica from atherosclerosis. I myself have been out of work for 18 months due to a herniated disk and sciatic nerve pain. I can't attest to how well a plant based diet worked compared to a meat based diet, but the week after I stopped work I transitioned to veganism after research into reducing inflammation. I got an MRI 2 months ago and my disk has healed extremely well, I had a "decent bulge" as the professionals say, for a 25 year old, and it has sucked back in substantially, still got sciatica, but the disk has healed well none the less.

Nolan Yes, that’s what Vegans do to stop eating animals and their secretions. Cos the fact that meat would go bad first is all that matters, not the totally unnecessary cruelty, fear, pain, anguish etc of Billions of animals every year. Or cos animal agriculture is responsible for 90% of rainforest destruction, or for 18% of ghg emissions, or cos Animal ‘products’ make us sick!.

I use the mustard powder technique. Powdered mustard seed is very strong so I take a few pinches, drop it in my mouth and quickly gulp it down with water. Now the myrosinase containing agent is in my stomach to be followed by broccoli, brussel sprouts, etc. I think it's about the best compromise that I've been able to find.

There are plenty of people who won't eat a WFPB diet, no matter how hard you try and scare them, so doctors have NOTHING to worry about when it comes to making a great living. I work with two diabetic coworkers who cook fatty meats and eat everything covered with cheese on a daily basis, but when you tell them to eat some beans or some quinoa or broccoli, they cringe and recoil because of carbs--and we all know that "carbs turn to sugar!!" So they stay obese, diabetic, sedentary, and pile in the meats and cheeses every day because it tastes great and their doc has them so fearful of anything starchy. Today's lunch: I smell the BBQ hot wings on the table now. Better pop the Metformin!

Yes, I constantly run into "my doctor told me to cut down on carbs" which is a lifestyle change, which drives me nuts because IT'S THE WRONG LIFESTYLE CHANGE ADVICE. If you ask them "do you know what insulin resistance is?" they always say no. :(

I know what you mean I love him too hes my favourite!!! That's why it means so much to me that I was able to do this. did you see the video I did of him receiving an award at vegan summerfest? That video was an accident. I was there to help shootHis presentation on how not to diet when he 1st released all that. The awards ceremony following that was a surprise so no one was prepared, I just kept my camera rolling as long as I could and eventually acquired video from a few other people that were there. It's like one of my favourite videos nonetheless.

thewhite8uard Well it’s blatantly obvious that many, in fact the vast majority of Doctors would promote an Omni diet. Simply cos the vast majority of people eat an Omnivore diet!. Re whether he is a genuine Doctor I will have to check, but I’m pretty sure he is a qualified General Practitioner. I’ve watched many of his vids. And they are VERY informative and accurate, I know as I’ve been Vegan for 35 years, and have read many books on plant nutrition etc.

Btw there’s many Doctors who are reversing their patients Heart Disease, diabetes, Atherosclerosis, Angina, Erectile Disfunction etc etc by putting them on a Vegan diet, and he patients are able to come off several meds within weeks!

@@Joan-ot9nf You may not know [if you already know this, forgive me] that Dr. G got into medicine because of his grandmother. She was in her 60's and near death due to heart failure. She got into a plant based diet treatment program with Dr. Pritikin, and long story short not only recovered, but lived in good health into her 90's. Dr. G later made the statement that he can help far more people doing research and posting it than treating 1 person at a time. [I wish I could remember where I saw that!] So yes, he is an actual doctor, but his work is in sharing research [for lack of a better phrase]. I appreciate that his youtube channel has no ads, and he shares huge amounts of knowledge for free. He does make money, of course, who doesn't? Not too many people spend hours working and giving that work away. Don't feed the trolls! You'll save yourself a headache, and maybe the trolls will go back under their bridge...to contemplate why they spend vast amounts of time arguing with people and throwing stones instead of being productive and helpful human beings... ; )

This is why nutritional biochemistry needs to be taught in medical school. Big pharma wouldn't allow that though, so the good doctors like Greger, Hyman, Fuhrman, etc., have to do their own research. That's my goal as a future doctor as well! Btw- Sulforaphane is one of my favorite phytonutrients! Dr. Rhonda Patrick has a lot of videos on it as well! Curcumin is number 1 for me! I treat my phytonutrients like I treat my Pokemon- gotta catch em all! :D

Yeah but it's been known for a long time that oxalates are anti-nutrients and in heavy doses may causes problems. He already has a series of videos on them where he shares how they actually help fight cancer. So they're also beneficial. You just don't want to eat too many of them. And with all of the amazing and beneficial diversity in plant-based whole food options it would be really hard to eat too many oxalates. There's actually been at least one case where someone has died from eating too much spinach. That was like all they ate. I've been mindful of them because I think they may cause thyroid issues especially if you eat too many and don't consume iodine? And as far as nightshades, again most in plant-based nutrition know that it's not very likely someone will have issues with them. I'm not sure if he meant one and twenty people that have issues or one in 20 people in general. if he's just talking about one in twenty people who have arthritis or some sort of inflammatory issue then that's a smaller population of course than 1 in 20 people. A lot of this comes down to maintaining a strong microbiome by eating healthy all along and in your body can handle more of what's unique about eating outside of the animal kingdom. And this is the healthiest to develop and maintain a healthy, strong immune system as well as prevent many of the leading causes of death...

I just love learning from Dr. Greger !!! I was diagnosed with Crohns,s disease 2 years ago and immediately went on a vegan diet and threw out the medication. I feel great. Anyone have any experience? advise? good health to all :))))
