and S=1 and R=1 will be the memory state in NAND gate presentation....if u have doubt u may draw the truth table of NAND gate and follow the steps that were done for the NOR representation

00:07 The SR latch is used to store single-bit data in sequential circuits. 02:04 Explaining the use of clock in controlling the store 04:23 Explains the working of a SR latch 06:22 Analyzing the second case with s=1 and R=0. 08:32 S=1 and R=1 gives Q=0, Q' = 0, a contradiction. 10:36 Q and Q complement have unexpected outputs in certain configurations. 12:41 Avoid using S=1 and R=1 in SR latch and flip-flop. 14:43 Using a NAND gate instead of a NOR gate in the circuit

I would like to make a little comment though... Usually the SR latch using NAND gates are named as S*R* (Sbar Rbar) latches to prevent confusion.

Why do the Reset in NAND SR latch is connected down, opposite to first case?
