That is exactly what I do , a pin thru both layers at the seam and needle down next to the pin - stitch forward to end of seam and reverse thru the same point for the same distance.

Do you ever have an issue with that seam pulling/coming apart later?

Not that I’ve ever noticed. You have to be careful to only clip stitches that are on the outside of the main seam. As long as you do that the seam edge should be locked down.

I have not had a problem with that. You have to be careful not to clip the seams too far. You're only snipping one or two stitches on the outside of the most recently sewn seam. That seam should hold everything in place. You do have to make sure to have your scant 1/4" seam though. If it's too skinny, then you may have problems.
