A nifty trick I got from a tv chef is to grate your chilled butter into your dry ingredients.

Thank you, I made the scones today, subsisting the milk and lemon for buttermilk and leaving out the sugar which I don't allow in the house, but added some sultanas instead. I also didn't bother with the cookie cutter, I simply cut the dough into six equal(ish) pieces that I rolled into balls and squished slightly on the baking tray. I say six, because I made them a little larger and I'm baking for one. Four of them will go in the freezer. They were delicious I will definitely use the recipe again 😋

Mine looked great but fell apart when I cut them. The upper layer was airy and dry and lightly crumbly, almost like a very light cookie. The inside was perfect! And the taste wonderful. Changes I made - I didn't add xantham - but the flour already had it. I used half coconut sugar half caster (didn't have enough) I left it in a bit longer because they weren't browning. I also didn't have a cookie cutter so I used my hands to make each scone. I doubled the bicarb (because Ive used this flour before and tends to need extra) Definitely worth another try 😋
@Bzatya Жыл бұрын
Edit.. once they cooled they were both dry and gummy and the same time :( and I think it was a poor choice to add bi carb

@BeckyExcell4 жыл бұрын
Yes - it's a ganglion cyst, they just appeared one day and I hate them 😂 I wouldn't advise using coconut flour as it becomes really, really thick when you introduce it to liquids. I'd always recommend a gluten-free flour blend instead!

Any citrus should work in souring Becky's homemade buttermilk concoction I would think🤷🏻♀️ I'm going to attempt the recipe with both readymade b/milk & her suggestion, & maybe Nigella's: a mix of natural/Greek yoghurt & milk wi citrus. 👌🏽 results in her buttermilk cake☺️ Happy baking🙂

Try other flours like oat. It might be a bit heavy for scones but makes great muffins and soda bread. I buy very cheap oats and mill them in my blender until fine.

Thank you for sharing your gluten-free recipe for scones. Looks delicious. I have just started my own gluten-free channel. I usually shared cooking recipes as I am not much of a baker, and I’m China where I live (normally) I don’t have an oven. However, since I am currently in Canada, I have the opportunity to bake again. Since then I have started baking cookies and GF breads. I would love if you can take a look at my channel and tell me what you think. Thank you.

At least your dough turned out properly. I went off a recipe and ended up having to make a cake as the dough turned out like a cake batter. Should have stuck with a tried and trusted method and my own judgement. 125 grams of flour, sorry recipe you lose you are fine for cake though.
