I so wish I was 30 years younger ! I love how you live and grow your for your family ! I was diagnosed with stage 4 ovarian cancer in Aug 2023! I took chemo I’m on maintenance now for the last three month they now have add chemo pills now everyday and it’s kicking my behind ! I loved gardening and canning but can’t now I have know energy! My grandfather was a potato gardener for people in town and his family! He was so proud of his garden

I use dried Kale, spinach and dandelion greens powdered in my scrambled eggs. Also soups, stews, casseroles, all ways I can think of to use those healthy greens.

Agreed!! You can mix them all up and powder them to have an already made "greens" mix to put next to your spices. Then you have it to add to anything you can, on top of over easy eggs, in soups, in quiche, etc. I've done that with dehydrated greens when I didn't even know what to do with all I was getting from my CSA.

I'm so impressed by your video sharing how you record. Having a regular android phone as opposed to these 1000.00 cameras and setups everyone else goes into as their money starts coming in is such a testimony to me. Jessica you might be interested in a channel called retired at 40. It is all about freeze drying. I think you will find alot of useful tips. As if you have much free time. Lol. I like duck eggs. Here in southern Missouri the taste gets stronger as it gets hotter. I and my family are not garlic fans. You my dear are such a great mom. Always about neutering you children and caring for the home. This is what most women are geared to do. I am an old lady,72. Having said that to say this, I just want to take you in my arms and give you a hug. You are such an inspiration. I am an old bird and have learned alot. Thank you. Just sayen.

Not everyone can afford a freeze dryer but they can a dehydrator. I have been dehydrating my food for twenty years on a low setting, not above 100 for herbs and not above 115 for other food, and they come out just fine with color and aroma. It is great your teaching your very young to know about gardening and food preserving. They will grow up having a great deal of knowledge about farm life. 😃Did I see some Plantain in your yard. What a wonderful medicinal Use plant, (weed) and the leaves and seeds are also good in stews, soups, bitter seeds are good to chew on.

The air quality here in eastern and southern Ontario has been horrendous, and all over the eastern provinces, being that much closer to the fires up north. I can only take comfort in knowing that the fires will in fact regenerate and renew the forests remembering that it is part of the normal cycle. I just wish it was not as vast an area. Praying for heavy rains. I am very thankful and grateful for all the firefighters and volunteers supporting them, they have come from many different countries to help Canada in our time of need.

I’m sorry you had a bad experience with freeze dried cucumbers last year. Can I recommend one more try? This time grate it, it makes wonderful tzatziki since your family enjoys garlic and yogurt, it’s so simple to make with freeze dried grated cucumber. You get the wonderful flavour without having to take the step of draining off the water from the vegetable. Just a suggestion. Love your channel and your wonderful family! Xoxo

I have had an abundance of zucchini this year too. I found instructions on dehydrating (or freeze drying) shredded squash and then blending into a flour. It works great as a gluten free flour alternative!!

We love your videos and watch each one as it comes out. Something we noticed at the end was your husband shoveling heavily compacted dirt. He should definitely spare his back and use the bucket on the tractor for scooping that.

The smoke in the air is horrible I have asthma and I have had to be on Methylprednisolone which I have not had to be on in many years. Also i been using my Nebulizer every 3-4 hours. My usual medication that I take was not helping at all at there Highest dosage. If it has been this bad for me I feel horrible for the people in Canada. I pray it Stops soon!!!You give so many ideas I love freezed dried food because it does not spoil. I keep the dehydrated vegetables on hand to use to make chicken noodle soup. I have now started to keep all the ingredients to make my corn chowder on hand with using dehydrated or canned potatoes. Little Miss Hannah is getting big I love see to your girls with her. You can the love they have. That was the biggest change as my daughter grew older when she was a adult we could just be friends. A

Maybe the cucumbers could be used to make a homade electrolyte drink like gatorade( my sons fav flavor is cucumber lime). Thanks for sharing your garden with us ( and your family).

oh my gosh I drank SO much of that when I was pregnant with my 2nd son. I know its very unhealthy, but I had hyperemesis and that was literally the only thing I could keep down!

Your youngest son is so cute! There's so many parents that feel guilty putting their kids to work, but they gladly love to help. I use a mesh laundry basket to dry my herbs and I noticed it'll get dark in direct sunlight, so now I hang the basket under my covered porch. A freeze dryer is my goal, but this works great for now.

I tried putting my cucumbers in my blender and then squeezing that in cheese cloth for juice. I put it in ice trays and made juice cubes. They are great in your drinks that you make. You can barely taste it. I enjoy all you show us.

Grilled zucchini is great. Cut in Long 1/2 strips looks like lasagna noodles. Season, then put on grill for 3 to 4 minutes on each side. We like them with a little crisp. I also use them in my lasagna in place of pasta. That is a whole other process with sweating with salt, rinse, and pat dry before putting the layers together. Let me know if anyone else tries this.

Jessica use your tomato slices and kale in your soups. Or powder up those tomato slices ad add it to your tomato sauce or soups that way.

I watched another channel that he used the freeze dried tomato slices straight on hamburger. Just the moisture from hamburger slightly rehydrated tomato but not to mush. Gave a little crunch but even that was desirable. I will be doing a few tomatoes to give it a try

I tried canned zucchini pineapple for the first time last year. Saw it on the channel: That 1870's Homestead. The kids absolutely LOVE it and I'll definitely be doing that the next time I have a lot of zucchini! Love your channel! We're north of you, in Michigan.

I wish raised beds were around years ago when my dad would put out such big gardens. Just the wedding alone would break your back. Things change and I love how you can walk between your beds easily without stepping on plants. We have smoke too from the fires along with heat and bad storms. Have a great week, Jessica. A year or two ago I dehydrated pickles, once done I sprinkled sour cream powder on one and salt and vinegar powder on the other. We did eat them but then got tired of them. So what I did was grind them up into two separate batches and know add it to homemade ranch dressing. Or topping for popcorn, and put a teaspoon or two in chicken salad. Hope this helps. The smoke is one reason our family moved away from Alberta. It was getting worse each summer and really effects what you can do each day. You are always so productive!

Hi we are your Srilankan fans just a tip you might like to try we noticed your little girls who have long hair is very dry as you have coconut oil if you give them a oil massage about 2 hours before washing their hair it'll be a very good conditioner for the hair do it in the summer months. Winter is to cold to try this. We are enjoying your videos happy to see the children helping you they learn a lot also. Love to all ❤❤❤

I would recommend you try cucumbers again if you have an abundance. Slice them thicker than shown (so they don’t break as easily) and sprinkle with some ranch powder or salt and pepper and fresh dill. I really enjoy eating them dry as a potato chip alternative.

Thank you for sharing! I am resting now after a full afternoon with another kind of food preparation. I iced of my freezer and used the time to cool most of my meat alternatives so it’s ready to eat. I struggle with my vision and other issues and using the stove top is not that easy, so I had a lot of meat alternatives in my freezer bought on sale that I have not been eating of since my vision got way worse last year. Now most of my freezer is ready to eat of, and I made more overnight oats too, and sliced up whole strawberries to smaller pieces to have on my “ice cream”. I make ice cream of just dairy free yogurt with still frozen pieces of fruit and berries. I just stir it up in the bowl I am having it, sometimes with some sweetener, and it’s ready to eat. If you eat it right away it’s like a fancy dessert/ice cream 😋 The yoghurt becomes like frozen yogurt. I am allergic to dairy myself. Not that extreme like your son, but I get really sick in my stomach, so I need to stay away 100%. I am used to it, just like you are, so I just wanted to share my easy summer treat 😋 Love and blessings from Johanne, Norway 🇳🇴

I love how u show your whole family helping and enjoying themselves-even tho they are learning life lessons~I like how u introduce different vegs to try. I notice some large families only reuse certain vegs over an over an not new vegs. I am 84 and still learning from u

I dehydrated my garlic scapes and they took 4 days at 135°. They are the hardest to dry out. But, very rewarding and I'll make it into powder. When I air dry my herbs, I have a 4 level mesh air dryer and I keep it in our dining room where there is no sunlight at all.

RuthAnn on Homesteading with the Zimmermans turned zucchini into canned pineapple. Brilliant. Thought you could use up some zucchini that way. It was easy peasy. I want to try it but don't have zucchini right now. Love your family and videos. I agree on the freeze dried tomatoes...very disappointing! Thank you for your tips and tricks!

The dried tomatoes can be ground into a powder and added to dishes for a tomato flavor enhancer, and added nutrition

Have you tried adding your freeze dried Kale to soup. Powdered tomatoes add great flavor to soups and casseroles. Same with powdered squash, extra vitamins and flavor.

You are a wealth of info thanks for sharing. I preserve greens as you do, but someone suggested that I powder them to add them to other things. So green powder goes into sauces, on burgers, pizza, scrambled eggs, and even the pasta my grandkids enjoy so much. Extra nutrition is always a good thing, hiding the veggies from picky eaters is golden.

Wow! Being next door to Canada, I thought that we were the only ones affected by the smoke. I love seeing the freezing process. I usually use a very low setting of my oven to dry herbs. You sure have some beautiful helping hands for your garden harvest. 👏🏽👏🏽💖💖 Thanks for sharing.👍🏽👍🏽

Greetings from Northern California! I feel for you with that smoky air as we have had more than our fair share of it. The Mendocino Complex was the worst for my family as we waited to evacuate until the smoke enveloped my son's house. It is putrid and almost impossible to breathe with ashes raining down. I absolutely love your videos & watching your sweet family working together.❤️
