Unboxing is totally a KZbin thing. The oven is amazing. Our big range packed it in a couple weeks before my Anova was set to be delivered, after using the Anova the range is not getting replaced. Bread, eggs, pizza, baking, seafood cooked to perfection; I haven’t discovered anything I can’t do in it.

To get a more tactual feel on those touch controls, I stick on "bump dots" - they come in different sizes and colors. If find it helpful on my toaster/MW when I stumble into the kitchen in the morning.

I can't say that Anova specifically is the future of home cooking, but affordable consumer sized combi ovens may just become top dog in the coming years. Though I thought products like the Sous Vide Supreme water oven would become a lot more popular than it did when I bought mine 7 odd years ago.

Very different video from normal, but appreciated nevertheless. In your review, when talking about the features and things that it can / can't do relative to circulators, toaster ovens, etc, would you highlight some of the key overlaps between kitchen devices, and where they differ? From the brief demo and discussion, it seems like this device could have a lot of multi-tasker potential and free up some countertop space. Hope all is going smoothly with the move!

I hope this isn't a dumb question. with using a C-Vap oven (I hope I spelled that right), do you lose the ability to kinda cook a meat or whatever in it's own marinade? anova's been targeting me with ads for this thing like crazy, but I dont see how I would use it. if it's a useful tool that would replace a normal oven, I'd be happy to throw that in as my standard oven when my oven dies or needs replacing, right? another question - their ad shows them saying that it's hot enough to cook a pizza - you can't char a pizza in that like you would an outdoor pizza oven, right? in any case, I enjoy your videos a lot, Kenji - you've taught me a lot about proper practices and the science behind a lot of cooking, which is an incredible asset as I delve into cooking things gluten free for my newly diagnosed with celiac wife

You could vacuum seal/regular zip lock the meat with its marinade and cook it just like you would in sous vide! Not sure about the pizza!

I bought this based on seeing this video! I regret it, and now seeing that Kenji never uses it I think he regrets the purchase as well. I think the biggest issue with it is that it's not a very good conventional oven and a terrible toaster oven! It seems to be mainly useful for steam-baking bread and sous vide cooking. I would happily trade it in for a Breville Joule Smart Oven today

I also want to see if Kenji is going to have a follow up review on APO. If you guys are interested, you can find many comments about user experiences on Reddit. It is a new machine (that comes with a brain) so I think it will take some time to get better based on all the professional chef/homecooks' feedback. I am shooting for a better 2.0 version in 2022.

This looks like a really cool product! Ever since you showed off the steam oven at your restaurant I've been wanting to try one of these for myself. I love using my sous vide but the plastic waste and effort of vacuum sealing makes me sad. I have so many questions though! Is the percentage of steam some arbitrary index made up by Anova, or can you actually control the relative humidity while cooking? If you actually can control the humidity with this, I'm imagining so many possibilities! Also, in your Serious Eats reverse sear article, you mention that reverse searing is the best way to cook a steak, specifically citing the benefits from reverse searing drying out the surface and enabling a better sear. When using a combi oven like this, how would you cook it? It seems like the steam mode is probably even worse than sous vide when it comes to not drying out the surface. However, I imagine that using this in convection mode with 0% humidity at 132F would enable a crazy crispy crust, because you could evaporate water for hours instead of just for the 20-30 minutes it takes for the steak to come to temp at 250F. I have no idea about how much water a steak holds, but this would be dependent on the oven maintaining a state below phase equilibrium while the steak cooks. It'd also depend on it being safe to cook meat at those low temperatures without water in the air to increase the heat transfer rate of the oven. I'd be interested in food probe plots over time to compare this to sous vide. Maybe I'll need to be the change that I want to see in the world and test this out for myself.

Haha it’s now in our basement storage room and my Breville toaster oven is back in its place. It’s good if you bake a lot of bread or cook a lot of meat Sous vide. I don’t do either much and ironically the one thing it does poorly is make toast, so I brought the toaster back out. It’s also just more practical as far as size goes.
