New England/Key West/San Francisco Style Fish Chowder.
Today I made a triple destination based fish chowder taking influences from New England, San Francisco, and Key west. The base was a New England Style Chowder, using Key West Yellowtail Snapper, and adding a San Francisco twist by serving it in a sourdough bread bowl.
Ingredients:
Bacon - two slices
Yellow Onion - one
Celery - two stalks
Carrots - equivalent to celery
Potatoes - three medium
Chicken stock - one can
Water - one can
Fish Filets - add as much as you want to reach consistency.
Butter - half a stick
Flour - two tablespoons
Heavy Cream - One small container
Sour Dough Bread - Bowl sized Rounds
Brown the bacon in a large pot. Remove half for toppings. Leave the renderings. Add onion, celery, and carrots. Cook only until soft. You do not want carmelization. Add the potatoes and get them heated up and started cooking. Constantly mixing. Add the chicken stock and water. Take to boil and simmer until the potatoes are moderately soft (able to cut with a little tension). Add the fish filet chunks. Cook until the fish is cooked through. Turn off heat and add rue mixture made from melted butter, flour, and heavy cream. Slowly fold in rue mixture and any remaining cream. Cut the top off of Sourdough round. Dig out the bread in the center. Scoop and fill the bowl until full. Sprinkle bacon bits on top. Serve.

I use the fish carcass to make a fresh fish stock, very time consuming, chicken stock is my 2 nd go to...I also put in green cooking bananas and hot peppers...looks great.....

What a cool idea using the hollowed out sourdough roll. I usually like the manhattan style chowder but I really like the way yours came out. I think the chunks of fish would have to be better than eating [or trying to chew] those damn clams. Great job!

needs some dill in the chowder and some grated cheese topping. Nice to see you taking more than one catch now and then. A mate takes home loads and freezes them the filets for future use, but then again we don't get year round fishing on the Irish Sea.

Too much stuff changes things. I like to keep it basic then people can add whatever they favor. Yea, I don't freeze fish. Just go out and catch more.

I was chumming, but these were caught off a little hump where they were chasing bait. Paddle tail soft plastic and jig head.

Great looking chowder, Steve. Why not take it a step further and instead of using chicken broth, make some fish stock with that snapper carcass.

Lots of extra time and work. A lot of people use the chicken stock to keep away from so much fishiness to the soup.

Just a very light yellowtail snapper jig (what they are called down here). I think it was an 1/8 oz. It was a wide gap hook which was the important part.

looks almost as good as mine, but, i have more exp.. about five thousand gallons of the seafood chowder in a sourdough breadbowl.. (i worked at the alaska state fair making soup every year for twenty yrs...) when i make it down to florida, i'll make ya some real chowder. does fifty gallons sound ok? small batches are hard to make.lol

I used to be an Old Bay guy but am really liking the Everglades heat. The original is nothing special but the heat version is really good. I find myself using it on a lot of things now instead of salt and pepper.
