The first concert I ever went to was Kansas because, of course, I'm originally from Kansas. Living in the UK now but "Dust in the Wind" has to be my all time favourite song from that group. Showing my age I know but what can I say, I'm 60 and lovin life!! 😀😀😀

Brie is one of my faves! I put slices in omelets, or on scrambled eggs, or I warm it in the micro until mostly melted, then either eat it with a spoon, with pork rinds, a cut-up low carb tortilla nuked to crispy chips, or a rare treat of a few grapes, or apple slices, or baby carrots… sometimes I even put slices on parchment on a paper plate and microwave it to crispy… enjoy…😘❤️🥰

Interesting thing that I learned about 6 months ago. I thought that I couldn’t eat cashews. It turns out that I can’t handle the oils. I bought raw cashews and made my own curry cashews with curry powder, lemon juice and salt. Roasted them on a low temperature for 45 minutes. No stomach issues. Problem is that I am addicted to them, so I have to watch myself with them. Just putting this up here if anyone seems to have issues with packaged nuts. My husband and I like Nickleback. My favorite song is Into the West by Annie Lennox. As far as bands and music, I love most anything except the newer music out. I do love Loreena McKennitt though. She has such a beautiful voice!

Thanks, Kristi! I love when you do your discount grocery food hauls. I went to UGO this week and found a two pack of Herdez Guacamole Salsa for one dollar! It was the big bottles. I bought two packs of the mild. It is so good. I heard Wendy at Loving It On Keto use it in a recipe and talk about how much she enjoyed it. I found a lot of low-carb items on sale there this week. Better than I usually do even.

I skip the pie crust now, but previously for holidays, I used to take that brie wheel and put it in a pie crust and cover it with sauteed mushrooms, onions and garlic. Then wrap the pie crust up and around the brie before baking at 350 for 30 minutes. If it isn't a holiday (with guests and relatives) I do the same thing but skip the pie crust. Most recipes have you dump jam over the top before baking, but we love it savory.

Love you, Kristi. For the brie, if you want to go sweet, put a blop of SF apricot jam on top of it. For sweet and savory, use red pepper jelly. You can probably find a SF version somewhere, but I've never looked since I make my own. For a savory version, try sautéed mushrooms and walnuts. No matter the flavor direction. It's 325 degrees for about 20ish minutes until the top looks caved in, but be sure not to burn the jelly if using. Use whatever food scoop you prefer. Since you got the big one, you might get the older kids and SOs in on the party. My personal favorite though is to put a couple of slices on keto bread, then deli ham, then SF strawberry or raspberry jam on the other slice. Close and grill like you would a grilled cheese. I was all over the place, musically, in the 2000s. Fireworks by Katy Pery, Roses by Outkast, Feel Good, Inc by Gorillaz, anything by Brad Paisley, If You're Going Through Hell by Rodney Atkins, Phantom of the Opera by Nightwish, Bring me to Life by Evanescence, With Arms Wide Open by Creed, Wake Me Up When September Ends by Green Day, and of course, Rockstar by Nickelback.

Use that sola granola with almond milk, hwc, cinnamon and extra sweetener if you want. Microwave and add butter and sf pancake syrup if you want. Great sub for oatmeal.
