Great video! A note on roasting potatoes: if you ever have a problem with the potatoes taking a long time to roast, try parboiling them in salted water for five minutes before roasting. Red potatoes may not require parboiling but Idaho potatoes definitely benefit from this extra step. Thanks again for these great tips, Sara! Nathan

I absolutely love the idea of replacing bread crumbs with zucchini! I've never heard of that before, but especially when I am trying to find any way I can to add more vegetables to my meals, this is a fabulous suggestion.

I made the oatmeal. You can save on clean up by using wax paper in your container. I used a 6x9 pan, and let it cool. It worked wonderfully!

One request, on your recipes that include meat could you suggest ways to swap in veggie friendly options if possible? Meal-prepped the mini meatloaves last Sunday and they were surprisingly good! I say surprisingly because of the zucchini and absence of any breadcrumbs. I cooked mine for 40 minutes, added the bbq sauce, and then cooked another 10 minutes. I'll definitely make these again! Also wanted to mention I left out the thyme.

wow the chicken soup was good.i did not use mushroom.i also used butter melted and mixed the flour then milk .I also add potatos and it was real really good.thank u.i also love the over night oatmeal in a jar that is yummy.thank u

My hubby is in the kitchen right now making the potatoes and mini meat loaf. :) He made the beef rolls yesterday and they were SO good! They were even better today! I noticed that there is barbecue sauce that gets brushed on the meatloaf but it's not on the grocery list or the ingredients list. Just wanted to let you know. :)

Roasted brussel sprouts are amazing! I love to glaze them with a honey and white miso marinade while roasting. It creates these amazing little umami packed bombs of flavour. :)
