Good tips, however one thing you didn't mention was that the rider who had a gap, was a A-Cat rider, so you didn't necessarily need to chase him to win the race, since you were in B-Cat

If you're a lighter rider who destroys everyone on the climb, you definitely need to pay attention when cresting the climb to keep your power way up or you will get caught and quickly dropped before you know it.

How do people know when the hills and downhills are coming and how long they will be? You memorize the routes? Or you never know, and just keep looking at that percentage number on the top right the whole time? Still wouldn't know how long the hill, downhills are though. To know exactly when to start/stop pedaling hard/easy?

Anywhere from 15 minutes to over an hour. It depends on the race but usually 45 minutes or so :)
