I make my sweet potatoes very similar, however you should try going a little heavy handed on the red pepper flakes and then when they are almost finished sprinkle them with that parm cheese and let it melt in the oven! Sooooooo freaking good!

Enchiladas look good. I've never made them with flour tortillas. Traditionally you would use yellow corn or even the red corn tortillas.

I’m with Mr. B... a good Cuban is hard to find. I normally make mine with regular rolls versus Hawaiian... to take down the sweetness and I add jalapeños bc well.... yum And homemade enchiladas... yesss!! I make my own enchilada sauce, growing up in TX it was a staple. Yummy...... And y’all,,,, make some chicken enchiladas with a sour cream sauce.... yum!!!!
