New Yorker here: you did beautifully, John! Cheesecake is not an easy recipe to follow but you "nailed it". Just FYI: my mom would add a bit of grated lemon rind to the batter for more lemony flavor. I salute you, Sir.

I worked for an airline company years ago and flew Dallas to N.Y.C. on a regular basis. I told the caterers at Kennedy how I loved their Cheesecake. The next week, on arrival, they gave me a huge New York Cheese cake! It freezes well and I took it home and flew to my parents with some also. Delicious.

Yea! This JUST HOW WE DO IT! Here on Long Island, my Mom had another rule for making NY cheesecake... no dancing with heavy stomping in the kitchen when the cake is in the oven and cooling! Ma knew best- even Pop knew to walk lightly! Glad that you enjoyed our NY Cheesecake!

I’ve been making cheesecake for quite a long time and you really nailed it. My recipe is a little bit different but it’s still pretty much the same thing. I’ve never used digestive biscuits before only graham crackers, but I can see where they would work. And here in the United States that cake pan is called a springform pan. You are absolutely correct as to why you add each ingredient individually and whisk it in because if you don’t, you run the risk of unincorporated ingredients or a very grainy cake and believe me, it’s not very good when that happens And FYI I make the same sauce but with blueberries because well they’re my favorite.

Beautiful cheesecake. One small suggestion is to make it a day ahead and refrigerate overnight. They are best served cold.

Nicely done John! Next time, try making it with some of your homemade cream cheese. It's the reason I started making cream cheese a number of years ago so I could control how dry I let it get. Back home we can get Philly in brick from. The soft is way too soft here. Downright liquid at times. While able to make the cheesecakes, and no one here had any comparison, it was acceptable. The first time I made one with the homemade cream cheese and served it, it got rave reviews. (And orders for several! ) I usually make Chicago-style cheesecakes which are heavy on the cream cheese; Key Lime, Grand Marnier and Chocolate, Kalusha...and whatever else sounds good. A baker friend convinced me a water bath is not always necessary. He told me when the baking time was at an end, turn off the oven, crack the door and put a wooden spoon in the crack to hold the door open. Allow the cheesecake to cool down with the oven. Once it has cooled, take it from the oven, loosen from the tin, and let it completely cool. Then refrigerate. (This helps to prevent the cracks on the top.) Also, moisture is the devil with cheesecakes...which is why they always were in boxes from the bakery. Impossible to find, so I usually take sheets of kitchen roll and stretch it over the top of the tin and rubber band it around. Then a shower cap over the top. After a few days (if the cake lasts that long!) just replace the kitchen roll for dry. Ah...feel the need to make a cheesecake!

I made this today. Ooooh man. This was lovely. So easy to follow under the masters clear instructions. It tasted lovely. And yes better than a supermarket mass produced one. Only one thing. Mine after cooking times and leaving in oven was a slightly bit not as firm as I hoped. But ….after chilling in fridge it came good. And tasted delicious. As John said. Top man John. Another gem. Mu guess is that where a lot of baked cheesecakes develop an unsightly crack in the top, your method of mixing by hand and the long, slow cooling in the oven were very good directions. Looks beautiful John!

I tried this recipe today and the cake looks and smells perfect. I'm so happy. I dared to pick up some new challenges in the kitchen since I found your channel and everything just simply worked like you teach it. My husband makes the best cheesecake. I only made one once before and it was raspberry topping with a white chocolate drizzle and it was SO good. My husband's was even better. We use graham crackers. Is that the same thing as a digestive biscuit? I haven't watched the video yet. I am in the middle of your pizza dough again. I wanted Pizza for Mother's Day and I am the only one who knows how to make it thanks to you. I am going to give this video to my husband and ask him to make this for us. I hope he says yes!

It was a smashing success! Made it last night and prepped the raspberry sauce this morning for an evening dinner. I also did a rotisserie chicken and flank steak. What you made looks very nice and probably very good. But being a New Yorker I can say what you made is more of a New York Italian cheesecake. A true New York cheesecake is made with cream cheese. Substituting all mascarpone changes the cake entirely. We have cheesecakes with half mascarpone and half cream cheese. Texture is better and taste is better with all or only part mascarpone. Give it a try!

Hi, John ... I wanted to let you know that your cheesecake recipe is an absolute hit. I made it for a friend's party recently (this being the first time trying such a thing), and no less than four different people wanted the recipe! The only challenge I had was coming up with a gluten-free substitute for digestive biscuits. Since some in attendance were gluten intolerant, I ended up finding a recipe and baking my own, which worked beautifully. Also, while all agreed that the raspberry sauce was wonderful, it wasn't needed ... the cheesecake was great all by itself! I made sure you got full credit for coming up with it, as well! Thanks again for a fantastic recipe and tutorial, and keep those videos coming!

John your channel is amazing, I stumbled upon it only the other day when looking up how to make Rye Bread and I'm glad I clicked your video! Cannot believe how easy it is to make butter...or mayonnaise! Made some today to add to a potato salad as it's getting warm again and it was absolutely fantastic! Also bought a bunch of stuff from your online store, including a shower cap (what a grand idea!)...I used to proof stuff in the inner pot of an Instant Pot with the lid on top and it was a horrible job getting the dough out of that tall pot...well, not anymore! Thanks so much for all the work you've put into this amazing channel. Have you ever made Pan Haggerty? It was my mothers favourite dish, but she's getting on a bit now and to my shame I never learned how to make it myself, if you ever decide to make a video on it you can bet at least one person would appreciate it! Cheesecake is a delightful indulgence. It has a ton of calories, but boy is it good. I've never tried to make it with marscapone cheese. We typically use a graham cracker crust and cream cheese here in the US, but everybody has their own variations.

@@JohnKirkwoodProFoodHomemade Hi John, not sure how things are in the UK but in America Mascarpone has at least double the fat as American cream cheese (e.g., Philadelphia) giving it a much richer, thicker and melt-in-your-mouth texture than standard cream cheese. While cream cheese has a tangy flavor, mascarpone is much milder and isn’t tangy at all. Cream cheese is firmer and more “rubbery” in texture while mascarpone is softer and much creamier.

Excellent. I have been making cheesecake like that since 1974 taught by a German visitor. Originally we used a sweet pastry base but I think we started using biscuit bases in the eighties. Where did you find the original recipe. I'd like to give them a thumbs up as well.
