I'm a native Texan, and while I NEVER make chili with beans in it, I often eat my chili with beans added to it, just as I sometimes add chopped onion, shredded cheddar, or cooked rice to the bowl. It just depends on my mood an what leftovers might be around. In fact, leftover chili ladled onto a spinach and cheese omelette with leftover cornbread on the side makes a fine breakfast!

I was told many years ago since "Chili" came from the South - Texas, New Mexico, etc, that it was derivative of the Mexican Chili Dishes, they did not add beans. But beans are high in protein and so many people started adding those especially if they couldn't afford much meat to do the dish. I like both styles. Though you do get gas attacks with the beans...

@@undie3x7it’s a Texas thing. The very name “Chile con Carne” translates to “chili with meat.” There’s obviously no mention of beans but that’s become the norm outside of Texas (where chili originated) P.S. the meat need not be beef nor even ground meat.

@santamanone umm I'm a Texan from San Antonio. Chili originated in Mexico, not Texas. I'm a chef here and obviously learned to make chili here. Chili con carne, which is typically just a topping(condiment) for tamales or enchiladas etc, typically doesn't have beans in it but can include beans. Even back in the 1800's could include beans. Chili served as a stew/soup(entree) typically does have beans in it. As for your point chili con carne name does not mention beans. It doesn't mention tomatoes or onions either but they are also part of it. Just cuz it isn't in the name doesn't mean anything. The name just conveys what is the main or most prevalent ingredient, which in any form is the meat.

Corn Bread is typically a side dish, like having a dinner roll or bread with a meal. The next time you make CORN BREAD, either use a muffin/cup cake pan or just pour the batter into a cast iron skillet and bake it in that, then when its done, you just slice it into wedges like a cake/pie, and eat it while its still warm, with lots of butter. Honey goes well on corn bread too!

It's simple, but sooo good.

I absolutely love that your children are so appreciative of the items they received. Blessings to you on your trip. OK when you screamed because your eyeballs were bleeding, I cracked up!!! I don't know if you'll ever see this comment, but here in the South, we eat beans and cornbread. We make brown beans with a big chunk of uncured ham, slow cook them bad boys for 6 or 7 hours, and season with salt and pepper. Peel and slice an onion lengthwise and toss it in there to cook too! Make some buttermilk cornbread, butter it and then crumble it into your bowl of beans. You want the beans to be moist, but no standing liquid after you add the cornbread. Just mix it together in the bowl. Heavenly food!

you literally just described my and my wife's favorite thing I cook. Beans, cornbread, and fried potatoes, then cornbread and milk the next morning. The only thing I may do different is, I generally make the beans after I've smoked a ham, we cut the big chunks of meat off the bone, and then the rest of the meat, and bone goes into the pot before the beans. Cook it all night, and then make the fried potatoes and cast iron cornbread the next day to eat with it.

I'm from the South and I was told my whole life that authentic chili is made with beans along with all of the aromatics and the peppers and tomatoes but NO MEAT at all. The recipe was developed and became popular in the late '20s and early '30s during the the Great Depression and the Dust Bowl in the Southwestern Great Plains region of the US. Beans were a cheap and more readily available protein at a time when meat was scarce. Chili was a nutritious meal that could feed a large family and not break the bank. Chili with meat is called "chili con carne" (Spanish for Chili with meat) and it has both beans and meat. I was taught that Texans are the ones who tend to insist that it's made with meat and no beans, mainly because they're a major beef producer and making their chili with meat only, is a way to promote the beef industry. It always made perfect sense to me. 🤷🏼‍♀️

In Southern states, especially with families who have a limited food budget, cornbread and pinto beans show up on the table regularly. The beans are slow cooked for hours, then when ready to serve you slice open a piece of cornbread and pour the beans over it. Toppings include diced onion, ketchup, or diced peppers. Sides are fried potatoes or perhaps fried okra and green tomatoes fresh from the garden. Ate an awful lot of it growing up!😁

I found this online: "Texas Chili: No Beans Allowed Carol Hancock, President and CEO of the International Chili Society, makes a good case for why there are no beans found in true Texas chili: because that is just the way it is. “I think there is probably no consensus on one idea (of what defines chili), but the reason why we don’t allow beans in chili is number one: real Texas chili has always been known as meat and the sauce with peppers,” Hancock said. “Beans don’t come into play at the cook off because if our judges are trying to determine a taste, beans are a dominant flavor and we wouldn’t get the pure chili taste.”

I like going from scratch but the wife needs gluten-free, with a mix I often add lots of extra cornmeal as most mixes are stingy on the meal, then more moisture is needed, so I dump in lots of apple sauce, I never measure, just add until the batter is right, a bit of cinnamon goes well, or get the applesauce with the Cin. Chili is one of those dishes that Mom made to provide a quick, inexpensive, meal. Adding beans made it go farther. It is a comfort food because it "warms you up" and reminds you of home. Soups and stews also started with a basic recipe that was often extended with leftovers or fillers (especially if you were feeding teenagers). [Actually, my dad often made the chili. He once was inspired to make the "Jail Chili" recipe from The Saturday Evening Post. The prisoners did not get beans, but it was spicy, so they probably did get the cornbread to cool it down.]

Y’all need to try red beans and rice, it’s a south American dish, it’s absolutely delicious! Cornbread is also often a side dish to it.
