I have to say, the best part of upland game hunting is watching the dogs work. I didn't get as much footage as I wanted to but we had a great afternoon. I also couldn't record skinning out the birds due to lack of light. I've always liked pheasant cooked this way because it's quick and easy. you can definitely debone and cut up the meat into small chunks. I prefer to leave the bone in because I think it gives it more flavor. I also use a whole can of beer not half. I misspoke when I said have a can. this is definitely better after it cools and sits for a couple days.
Recipe:
pheasant (deboned or not)
potatoes (I like small red potatoes)
celery
carrots
onions
parsnips
shiitake mushrooms (or wild mushrooms)
garlic
bacon
salt
pepper
basil
parsley
oregano
one inexpensive beer
put all ingredients into dutch oven and place in preheated oven. (or use your Dutch oven the traditional way with coals). Cook for 45 minutes and remove from heat. let sit covered for an additional 30 minutes. Serve and enjoy.
