Greetings from Spain, you treated your jamón so great! Actually, we only eat jamón by itself and the pan con tomate y jamón, but we rub a lot more tomato on it (we tend to use breads with much more texture, so that more tomato stays on it). Thanks so much and hope you have enjoyed your jamón!

Don't know if you'll see this, but as a Spaniard, I'm so glad you did your research to treat the meat right and knew all the right techniques for cutting and storing the Jamón. You definitely used the meat pretty liberally after that, which I suppose was the purpose of the video although most of us would keep the meat pretty basic to get the full flavor of the meat without any distractions.

Spaniard here, iberian ham truly is our wagyu pig, to be honest your knowledge is quite remarkable, product info, how to cut it etc. Obviously 5 jotas ham brand is so much more expensive in the US but still quite luxurious in Spain. Just one thing, for a ham that good never cook it or just room temperature because it gets too salty and misses its taste completely. If it’s for cooking, cheap ham is a better option. Just eat it on its own or with a little piece of crisp bread.

There actually is “going back” after opening that plastic bag; in fact, it actually is what you should do right away. That’s what the string is for, you’re meant to hang it (hoof facing up) until you cut the jamón open. That’s the no turning back moment. Furthermore, if you keep the jamón inside the plastic bag you’ll spoil it. It will completely ruin the flavour and you might even have to trow it away due to the meat rotting. Just tie the rope right under the hoof, and hang it in a cool and dry space. It’ll last you for months and it will keep all its flavour and aroma. Bear in mind that if you do this the fat will continue to drip so you might want to put something beneath. In Spain we just attach a little funnel to it and it’ll naturally drip into it, leaving your floor spotless.

I’ve had Jamón Ibérico de Serrano and it was delicious. Just the nutty flavor itself was amazing. It’s expensive but definitely would buy or again and I recommend to anyone who’s interested.

This makes me happy my great grandfather who was 90 recently passed, he had gotten jamón one year for Christmas and it was amazing I barely remember it but the memory of watching him, my mom, aunts and uncles all cook while I sat under the using my dad’s shoe as a pillow is a great memory

Great content, As a Spaniard with plenty of jamón cutting experience, I just wanted to let you know that the way you cut it is a bit dangerous, The knife should always face your body, not your arm. If you are right handed, left hand grabs the jamón from the higher side, and the right one holds the knife sliding through it facing your body, that way if you apply too much strength, you won´t ever cut your arm.

As a Spaniard I have to say that you use the Jamonero's knife better than me hehehe. I have only one pro tip heheh. When you have a 5J you should remove the Yellow/brown fat if you want to use it as a cover to prevent embitter it. Peel that fat into a white/light pink fat colour to use it as cover.

Yeah, we buy those (there's cheaper versions) in Spain during Christmas, the fat can be blended and used to cook the same way some people use beicon fat (for example over the borders of pizza or below it, it's crispy good), and if you wash and fry the though skin that comes with it its crunchy and tasty, you can even cut the bones and make soup with them, i use everything on the leg (except the sour yellow fat parts those you cut and give to the dog, or melt and use for oiling machines). If you buy an expensive acorn fed like he did though, the fat contains a lot of omega3 so it's really delicious to cook, use it all like you would wagyu fat, by the way, "secreto ibérico de bellota" is the wagyu of pork, try it too if you can.
