Nigella, we here in Texas have much experience with "Tex-Mex." When we make guacamole here, if you will leave the avocado seed in the bowl and sprinkle some lemon and/or lime juice all over the guacamole or avocado salad, it will not turn brown. Of course, remove the seed right before serving. LOL

Pour a glass of wine. Put on Pavarotti and get not just your hands but shoulders also into it. Sing loudly as you salsa the blade around the board! Breath deeply over the board of herbs and throw back your head and laugh with glee. You are a mezza' master. 😉
