You can line the tray with tin foil and save yourself some clean up time. I’ve never cut the shoulder up to cook it before, nor the braising in juice. I like the idea of more bark. I’ve always just mixed in extra rub (I home make mine so it’s not as expensive) after I pull it to give extra flavor.
