Beyond the refreshing local favorite, Urrak, Goa offers another summer delight: Niro, the pure juice of the cashew fruit!
In today's episode of Goan Appetit with Alroy, we discover how Niro is made and the fascinating process behind it.
Extracting Niro might seem simple, but it's a labor of love. The Society of the Divine Word (SVD) in Raia, Goa, has been a local haven for fresh Niro for over 50 years.
Their journey begins at sunrise, hand-picking cashews from their expansive 60 acres of farm. Back at the processing unit, the cashews are meticulously separated from the fruit. The fruit is then crushed, yielding Niro, the exquisite juice enjoyed by all.
