I really love your recipes Gemma. Your recipes aren't complicated or hard to follow and surely worth it. The only thing that is hard, is to find some ingredients like cream cheese and whipping cream or heavy cream. I have to travel afar in order to buy one cause the groceries in our place don't sell that.

I made this cheesecake for my daughter-in-law's birthday celebration today. It tasted wonderful but, while it was set firmly (I made it yesterday and kept it refrigerated until serving) it softened up very quickly, within no more than a minute, once taken out of the fridge. Admittedly, I'm in Australia and we're having a heat wave, but I'd recommend that if you're making this in hot weather that you add gelatine to keep it set. There is a note on using gelatine to help set this in Gemma's written recipe on her site and I know that I'll be using it next time. Other than that, I'm coeliac and so used gf gingernut biscuit for the crumb base and the flavour was very complimentary to the filling. This is a wonderfully tasty dessert but it does have issues if the weather is hot, so be aware of this and use the gelatine to prevent it softening too quickly when serving. I'm even thinking of making a frozen version of this too - it would be another tasty way to serve it.

it is great to finally find a recipe for strawberry cheesecake that actually flavours the filling instead of just adding strawberry sauce at the end... great video gemma :) when i made this recipe i sliced strawberry's in half and placed them cut side facing out all the way around the edge of my spring form pan before adding the filling, so when i took it out there was a row of strawberry's visible all around the edge of my cheesecake :) once again your recipe has made me the hit of another family lunch ^_^

Here in Korea, strawberries are more acknowledged as winter/early spring fruit (local farmers grow the plants inside greenhouses so that they don't freeze to death). Just a month or so and I can obtain the juiciest, sweetest ones at the grocery store! Can't wait to try this out!

You should google a "chia egg". It works GREAT in baking! It's just chia seeds and water, and after the chia seeds puff up, it has that gooey, binding, egg texture.

easy replacement for egg: Mix together 2 tablespoons of flour, 1/2 teaspoon of oil, 1/2 teaspoon baking powder, and 2 tablespoons of milk, cream, or any dairy free alternative (coconut milk, soy milk, almond milk, etc). Use this recipe per egg!

OMG. Just found your videos and really enjoy. I have cut back on baking because the grandkids don't eat much and I give it all away. I love cheesecake. I saw your individual cup recipes but binge watched several of yours. I really enjoyed watching your videos and using the microwave in the summer is a bonus. Love the accent. Katherine, it is a different thing! The tub one is designed for spreading, and is really soft. My Mum found that the Tesco own brand, full fat cream cheese tub is drier, and works well for her. I believe you can. What I know is that it can only keep its shape in the fridge for 2 to 3 days. Hence, the cheesecake has to be consumed within that period.

No bake cheesecake is such a thing in my country, however for us it’s always made from yoghurt, so I’ve never tried it with cream cheese before! I hope to try it one day since cream cheese is insanely expensive where I’m from, but it looks absolutely fantastic! ❤

Tried this, after it was set the water from the strawberries seeped through the base making the base all moist. Wee tip, after blending the strawberries, try reducing it down in the pan as it takes all the water out.
