I recently used this bao dough recipe to make nai wong bao and OMG it came out so good! Thank you so much for sharing. I have celiac disease and my husband is Chinese-Vietnamese and it's nice to be able to make some of his favourite dim sum.

Yes, you can. The orange sweet potatoes have more moisture than the white ones. You might need to adjust the water usage.

Hi, thank you for making gf buns. It look really nice. I tried yr recipe. After 1hr rest, can see the dough surface cracking. After steam it doesn't rise, it quite flat. Can you advise me of this? Fyi, I didn't use mash sweet potatoes as I do not have one when I make this. Thank you v much. Appreciate yr reply.

Mash sweet potato is a necessary ingredient. I have done this recipe many times. It should be no problem to replicate if following the instructions.

Sugar in the dough is necessary and it can be consumed by yeast. Sugar in the filling can be replaced by sugarless sweetener.

Yes, I weigh the raw ingredients. I cut down on the sugar. Will that affect the dough? Is it possible to freeze the dough? How long can I keep the dough in the freezer? Unfinished bun can steam again the next morning?

The sugar can be reduced by half and the dough should be kneaded evenly. I have not tried refrigerated dough. After the buns are wrapped, they should be continued to complete the remaining steps. The cooked buns can be frozen or refrigerated.
