Ingredients: • 3lbs (1.3kg) Pork Belly • 1tbsp Salt (More to add into pork skin) • 1tbsp Five spice powder (More to sprinkle onto meat) • 1tsp White pepper powder • 4tbsp Chinese cooking wine (Shaoxing wine) * Above ingredients is only a guide. Adjust the amount accordingly if the pork belly is bigger or smaller. Method: 1. Wash pork belly and blanch in boiling water for 5 minutes. 2. Pluck hair from skin and make a few slits on the meat. 3. Mix all seasoning ingredients and rub onto meat and into the slits. *DO NOT rub on the skin. Skin should be kept dry. 4. Sprinkle and rub extra five spice powder onto meat especially the sides. 5. Transfer meat over to a big piece of aluminium foil. Dry the skin as much as possible with kitchen paper. 6. Poke as many holes as possible on the pig's skin. 7. Fold the sides of the foil to create a box and wrap the meat, leaving only the skin exposed. Leave extra height of 1 inch up. 8. Transfer into the fridge and leave it inside for 24~48hours. 9. Take out before you want to roast. Cover the whole skin with a layer of salt (about 5mm height). 10. Roast in preheated oven, 180c for 50 minutes. 11. Remove from oven after 50 minutes and increase temperature to 240c. 12. Meanwhile, carefully remove the layer of salt crust away and transfer meat onto a new piece of foil or right onto a baking tray (if you dun mind washing). 13. Back into the oven and roast at 240c for another 40~50 minutes or until skin is perfectly done. ⚠️Keep a close look-out during the last 15 mins to ensure skin is not burned. ⚠️ Every oven and temperature is different. Therefore roasting time may vary depending on your oven's heat.

I tried this method before, don't throw away the salt as it has very good aroma after baked on the Pork skin. I use it for cooking and soup.

Hello there!🥰 Yes. Top and bottom heat. However, you may switch to only top heat during the last 10 minutes to get the crackling skin going! Keep your eyes on it during the last part to make sure nothing goes wrong! 😊
