With all the grocery access we have now, do you have suggestions to make this dish fancier and have more company appeal, or is this just an acceptable but sad wartime dish?

Yes! I think butter and cream/milk to make the mash richer would help HUGELY. If you're putting pickle inside it's not going to ever be a super fancy dish, but you could pick a caramelised onion relish, cook it and then add some bacon bits on top once it all cooked for an extra meaty crunch.
